Place the meat in a saucepan, cover with cold drinking or filtered water and put on fire. After the water boils, cook the broth for 20 minutes, periodically skimming off any foam that forms.
    While the chicken is cooking, prepare the vegetables. Clean and wash them. Cut the potatoes into cubes or cubes, cut the carrots and onions into smaller pieces, and grate the carrots on a coarse grater.     When the chicken is cooked, remove it from the broth. If you are using chicken with bones, you will need to remove them, shred the meat and place it back into the broth. Place the potatoes into the boiling broth. Wait for the soup to boil again, and after 10 minutes, add the broccoli, onions and carrots. Add salt, pepper, seasonings, bay leaf, cook for another 5-7 minutes. Turn off the heat and let the soup sit for 10 minutes. Serve with finely chopped herbs.

    Tip: when serving dietary soups with chicken broth, you can add half a boiled egg. This will not only make the soup taste more interesting, but will also increase its protein content and make it more filling.

How to cook at home

1. Wash the chicken fillet thoroughly and cut into pieces. Place a pan of water on the fire and place pieces of meat in the water.   3. Thirdly, there is a taboo on the use of frying. Those who like to fry carrots and onions in hot oil will have to forget about their preferences. In order to prepare a truly dietary soup, pre-processing of vegetables in a frying pan must be canceled. All ingredients should be thrown into boiling water, each of them in its own sequence.

To prepare you will need:

  • chicken (breast) – 500 g;
  • potatoes – 120 g;
  • onion – 100 g;
  • greens – 20 g;
  • carrots – 80 g;
  • pepper, salt - to taste.

The broth is cooked on the chicken breast. After the meat has reached readiness - it has become soft, it should be pulled out.

Vegetables are thoroughly washed and peeled, then cut into slices. The onions and carrots are thrown into the boiling water first, and after 15 minutes the potatoes are added to the pan. The soup is cooked for another 10 minutes over reduced heat, after which chicken meat, cut into pieces, is added to it.

The broth is salted, peppered, brought to a boil and removed from the heat. The soup is infused for 20 minutes and served. Before eating, sprinkle the dish with freshly chopped parsley or dill, depending on taste preferences.

Chicken meatball soup

The soup contains:

  • minced chicken – 300 g;
  • leek – 100 g;
  • buckwheat – 50 g;
  • carrots – 80 g;
  • greens – 30 g;
  • pepper, salt - to taste.


Making meatball soup is quite simple.
To do this, bring water to a boil in a saucepan and add buckwheat to it. Cook the cereal for 10 minutes, then drain the boiling water and pour in new water. At this time, prepare the vegetables: washed and peeled onions and carrots are finely chopped. When the water with buckwheat has boiled again, vegetables are poured into it. Boil the soup for another 15 minutes and add the meatballs. The most convenient way to make them is with a teaspoon - scoop up the minced meat, level it (so that it doesn’t hang over the edges of the spoon) and lower it into the water.

After adding the meat, cook the broth for another 7-8 minutes, add chopped herbs, salt, pepper and turn off.

Chicken soup with vegetables

Ingredients for making soup:

  • chicken leg - 350 g;
  • carrots – 100 g;
  • cauliflower – 150 g;
  • onion - 120 g;
  • bell pepper – 200 g;
  • greens – 20 g;
  • pepper, salt - to taste.

All vegetables should be thoroughly washed and cut into pieces of the same size. Cauliflower is disassembled into small “umbrellas”.

At this time, cook the chicken broth, following the advice above. When the chicken is ready, remove it and let it cool. The first vegetables to be thrown into the pan are onions and carrots. After 15 minutes, cauliflower is placed behind them. After another 10 minutes – pepper.

When the ham has cooled, it is cut into small pieces and also sent to the boiling broth. After 3-4 minutes, add salt, pepper and chopped herbs to the soup. After 8 minutes the soup is ready.

Chicken fillet broth in a slow cooker

For many students, dorm residents and summer residents, this original invention has become a real salvation. Cooking with a multicooker is easy and simple, because everything has its own programs. And she can even cook chicken broth herself. But first things first.

Ingredients

  • Chicken breast fillet – 600 g;
  • Water – 2 l;
  • Salt – 2 tsp. without top;
  • Onion – 1 head;
  • Parsley - 3 sprigs;
  • Wheat croutons – 130 g;
  • Bay leaf – 1 leaf.

How to make simple chicken broth from fillet

  1. Place the breast, cut into large pieces, the peeled onion and bay leaves into the multicooker bowl.

  3. Now the broth will cook for 60 minutes, and we just need to have time to remove the foam before boiling the water. And the multicooker will do the rest for us.
  4. When the signal sounds indicating the end of cooking, remove the onion from the bowl, pour the broth into plates and add a handful of crackers and finely chopped parsley to each serving.

A light and satisfying chicken fillet broth prepared in a slow cooker turns out perfectly clear, rich and very tasty. Add chopped potatoes, finely chopped onions and carrots, and a simple chicken soup is ready. If you pour some noodles, you’ll have a pasta dinner. From my recipes it is clear that during the competition my family eats, to put it mildly, high-calorie foods. Not only do I really love putting cheese and mayonnaise in almost everything, as is true, but I don’t stop at my dishes, I also test the recipes of other contestants in search of new tastes for our family. By the way, many dishes have already taken root in our family. Svetka is already hysterical, demanding that her waist be returned to her. I solemnly promised everyone that as soon as the competition with our beloved “Makheev” was over, there would be a week-long break until December 31 for exclusively dietary dishes. But then I thought: “Why wait, waiting is not about me!” After all, with “Maheev” you can probably lose weight, or at least not gain extra pounds. Therefore, based on one of the diets tried by Svetka, and she tried a lot of them, I prepared this soup. In the original diet, you need to eat soup two to three times a day, and as additions to the soup you can use boiled chicken, beef, eggs, some fruits and vegetables. I decided to slightly adjust this soup, without leaving its undoubted usefulness and low-calorie content.


Diet soup Cooking time: 35 minutes. For a three-liter pot of soup we will need:

Diet chicken broth

Ingredients:

  • lean chicken meat (for example, 1 breast or neck) – about 400-500 g;
  • onions – 1 pc.;
  • carrots – 1 pc. medium size;
  • parsley root – 1 pc.;
  • bay leaf – 4 pcs.;
  • cloves - 2 buds;
  • peppercorns – 3-5 pcs.

Preparation

First, prepare the meat: remove the skin and wash it. Peel the onion, parsley root and carrots (the carrots can be chopped, but not too finely).

Place the meat in a pan, add the required amount of water and set to cook. After a steady boil, reduce the heat to medium and boil the chicken for 3-5 minutes, then drain the liquid. Now we thoroughly rinse the meat (preferably with warm boiled water) and transfer it to a clean pan, then fill it again with fresh cold water, set to cook and immediately add the remaining ingredients. Cook over low heat, covered with a lid, for about 40-50 minutes, carefully removing the noise from time to time.

The dietary chicken broth should turn out transparent (if the transparency is insufficient, add an egg white extract and carefully strain). Carrots and meat can be used in making soups (discard the rest).

Diet chicken broth can be served, for example, with the meat on which it was boiled, with a boiled egg, with mashed potatoes, rice and/or other dietary dishes. Don't forget about fresh herbs.

Using approximately the same method (see above), you can prepare dietary broths from turkey meat, lean beef or lamb (these types of meat take a little longer to cook than chicken).
