To make custard cakes you will need a fairly simple composition of ingredients. We will fill the eclairs with curd mixture with the addition of raisins. If desired, the recipe can be supplemented with other dried fruits - dried apricots, dates, prunes. We don't use custard in this version, but make it if you want.

Ingredients:

For the test:

  • 150 ml water
  • 30 g whole wheat flour
  • 40 g corn starch
  • 1 tablespoon vegetable oil (sunflower)
  • 1 teaspoon baking powder
  • 2 eggs
  • a pinch of salt.

For filling:

  • 250 g soft cottage cheese (you can take grainy cottage cheese and blend it with a blender)
  • 50 g sour cream 10–15% or natural yoghurt
  • 50 g raisins
  • sweetener - honey or sweetener to taste (optional).

For chocolate glaze:

  • 4 tablespoons water
  • 20 g butter (you can use coconut oil)

Step by step method:

  1. Pour water, oil and salt into a small ladle or saucepan and put on fire.
