Gongfu Cha is the name of one of the popular tea ceremonies in China. It is carried out when meeting guests, as well as with family. Semi-fermented turquoise oolongs are most often brewed.

  • Water for brewing tea is heated to 95 °C.
  • The teapot is wiped with a tea brush to warm it up. Be sure to heat all the dishes in which tea will be served.

  • Sencha is infused for 1-1.5 minutes, and gyokuro is infused for 2 minutes. The tea is poured completely into cups.
  • Almost all types of green tea can be brewed several times, but the water temperature will need to be increased by 10 °C all the time. This rule does not apply only to powdered matcha tea and roasted hojicha.
