It is not difficult to render tail fat at home. It is cut into pieces and poured with cool water for some time (30–50 minutes). Next, after thoroughly rinsing, you can begin reheating. This is done in a steam bath, in an oven or in a thick-walled frying pan. The product melts easily.

To make the melted fat white and without a burnt smell, it is better to use a steam bath. After boiling, leave the lard to “rest” at room temperature, then strain the still warm fat and pour it into a container for storage. If you reheat in the oven, it is better to use cast iron or earthenware. The temperature should remain within 150 °C.

Reheating on the stove (in a frying pan, cast iron) will take less time than in the two previous options, but the final product may turn out yellowish in color with the smell of burnt cracklings. To prevent this from happening, you should pour a couple of tablespoons of water into the bowl (it will prevent the fat from burning) and use low heat.

How to select and store

Fresh tail fat should have a white color and a barely perceptible specific lamb aroma. Fat in the fat tail is formed towards the end of the summer season, when the animal eats plenty of meadow grass. In winter, this substance is used by the sheep’s body to produce energy and heat the body. It is at the beginning of autumn that fresh fat tail fat arrives on the shelves.
