Lemon muffins with candied fruits

Lemon and candied fruits are healthy in themselves. But if you add a little cornmeal and a few extra ingredients, you'll have the perfect treat.

Composition of ingredients

To make 6 muffins you will need:

  • 100 g corn flour;
  • 2 chicken eggs;
  • 2 tsp. olive oil;
  • 30 g candied fruits;
  • 100 g soft low-fat cottage cheese (can be replaced with yogurt or sour cream);
  • 2 tbsp. l. milk (fat content not higher than 0.5%);
  • Art. l. freshly squeezed lemon juice and the same amount of orange zest;
  • stevia to taste and tsp. baking powder.

Step-by-step cooking process

The preparation of the muffins is as follows:

  1. The first step is to separate the whites from the yolks.
  2. After this, you need to mix the yolks with olive oil, add stevia and beat everything with a mixer.
  3. The next step is to add soft cottage cheese, zest, baking powder and corn flour to the mixture. After this, the composition must be mixed again and milk added to it.
  4. Next, you need to beat the whites in a separate bowl and add them to the general mixture.
  5. After this, you need to re-mix all the components until a homogeneous mass is obtained and add candied fruits to the dough. If they are very large, it is recommended to cut them into smaller pieces.
  6. At the final stage, you need to mix everything again and pour the dough into molds. It is better to fill it 1/3 full, as the dough will rise greatly during heat treatment.

  • Corn flour is absorbed by the human body by 90%. If the product is subjected to prolonged heat treatment (this includes cooking in an oven) or is prepared in the form of porridge, then this figure increases by another 4%. Thus, this type of flour is perfectly digestible.
  • The greatest effect can be achieved if you cook dishes with corn flour and other products that belong to the category of grains.
  • Corn flour must be stored in a very dry place. The packaging must be tightly closed.
  • If you use flour that has expired for cooking, it will not bring any benefit. On the contrary, such a product is extremely harmful, so you should always check the information on the packaging.

Speaking about the benefits and harms of corn flour for weight loss, it is worth noting that it is stored for a very short period of time.

The thing is that ground grain reacts with oxygen quite quickly. An oxidative process occurs. Because of this, ready-made dishes may acquire a bitter aftertaste. Therefore, you need to use corn flour quickly. Based on this, there is no point in buying large-smelling flour.

If you want to buy a lot of product at once, then it is better to buy freshly ground flour and grind it yourself as needed (a regular coffee grinder is also suitable for this). Or you can purchase heat-treated grain. It is stored for a long time, but questions remain regarding the benefits of such a product.

What are the risks of a gluten-free diet?

Gluten is naturally found in many nutritious foods, including whole grains such as wheat, barley and rye.

However, some processed gluten-free foods are NOT fortified with vitamins and minerals. Thus, following a monotonous gluten-free diet may increase the risk of developing folate, riboflavin, niacin, and iron deficiencies.

Therefore, to reduce the risk of side effects, it is important to make sure that a healthy gluten-free diet provides you with all the important nutrients from other sources. So:

So:

There are many products available to provide a balanced diet for people forced to avoid gluten. Many natural foods do not contain this protein:

  • fruits and vegetables;
  • legumes;
  • some whole grains;
  • dairy products and oils;
  • fresh meat, fish and poultry.

Wheat, rye and barley are the main foods to avoid as part of a gluten-free diet. Gluten is also commonly added to canned and packaged foods.

Additionally, some grains, such as oats, can be cross-contaminated with gluten during processing.

For patients who do not have gluten intolerance or have not been diagnosed with celiac disease, switching to a gluten-free diet may pose a risk of essential amino acid and mineral deficiencies.

To avoid these problems, you can work with your doctor to create a gluten-free diet that is high in fresh, whole, gluten-free foods and minimal in processed foods.

How is corn better than wheat?

Wheat flour is most often used in cooking. However, its corn variety has more beneficial properties:

  1. It can be consumed by those who are on a diet. It improves the microflora of the stomach and intestines, and also slows down the fermentation process of carbohydrates.
  2. It is allowed to be eaten by people with gluten intolerance.
  3. The feeling of fullness after eating it lasts much longer.
  4. Due to its rich chemical composition, it is recommended for use by athletes and people undergoing severe physical activity.

Corn flour, starch and grits (polenta)

When it comes to finely ground corn, there are a few types to be aware of—they're important because you can end up with a disastrous result in your dish if you use the wrong product.

Corn grits: These are the coarsely ground corn product used by most people in their cornbread. The kibble is made from the whole grain, including the bran, germ and endosperm, so you can retain more nutrients than, for example, using cornstarch. Some people also use the word "polenta" to refer to corn grits, although polenta is actually a dish using medium-milk cornmeal rather than a separate ingredient.

Cornstarch: is a gluten-free, processed product in which the endosperm is separated from the germ and bran and then ground into a white powder. Many people use cornstarch to thicken sauces. It does not contain, but is also essentially devoid of, nutrients.

Cornmeal: is a finely ground version of corn grits, meaning it contains all the grain. You can also use it to thicken liquids, but most uses involve baking (tortillas or bread products). Corn flour can be used in combination with other types. It is usually available in white and yellow corn varieties.

How to make cornmeal at home

There is no need to buy cornmeal from the store because if you know certain rules and have the right equipment, you can make it at home. There is no need to have a millstone because you can use a powerful grinder that has different modes to thoroughly grind the product.

The recipe itself is simple:

  1. Only selected beans that are not damaged should be sorted.
  2. The beans are then lightly dried to keep your body in good condition, providing them with many nutrients.
  3. Next, you need to grind the corn grains in a coffee grinder. This must be done for at least 3 minutes.
  4. Sift the resulting mass through a fine strainer.
  5. If large pieces remain, they should be ground again.

How to take fiber correctly for weight loss?

It is sold in powder form, which must be diluted in liquid in the proportion of 1–2 tablespoons per 1 glass. As a supplement, take raspberries, currants, blueberries, apple and grape juices.

Fiber for weight loss also goes well with kefir or natural yogurt. Using them you can prepare delicious and healthy cocktails:

  1. Spicy green

  2. With dried fruits
    . Steam and chop five pieces of prunes and dried apricots. Add a pinch of cinnamon. Combine with 200 g of dairy product and a couple of tablespoons of fiber.

What can you substitute in baking?

Before changing ingredients, you should analyze the form in which flour is required. If the baking instructions indicate corn flour in its pure form, then replacing it will be extremely problematic, since the taste, smell and structure of the finished dish will change. Therefore, it is better to abandon the idea and choose another recipe.

When corn flour is only one of the components, it can be replaced with a product of similar composition, that is, gluten-free flour. Rye or buckwheat flour is suitable as a substitute.

If a recipe requires only a small amount of flour, it can be replaced with cornstarch.
