Now more than half of the products on store shelves contain vegetable fats in addition to a creamy base. They are absorbed worse by the body and work cumulatively. Those who consume oil become prone to obesity. Bread, like any other flour product, contains starch. This carbohydrate also contributes to obesity. When combined, it turns out to be a real combo. Starch slows down the breakdown of fats - both dairy and vegetable. Thus, regularly eating a sandwich will sooner or later lead to significant weight gain.
  • Increased cholesterol levels . The same vegetable fats increase cholesterol levels in the body. High cholesterol levels can lead to blood clots and vascular dysfunction.
  • Insulin production . Eating this combination of foods leads to the production of the hormone insulin. Its job is to feed the brain with glucose, but in this case it will transport toxins out of the cells. It would seem, what is the problem? The problem here is that a hormone with such a “work” will change the functions of a hormone that is already in the body. This is fraught with consequences such as a lack of substance in the body.
  • Hormonal problem . Another “cons” associated with insulin is that in addition to dysfunction of the hormone, it moves. Fatty acids transport it into the cell. Less of it enters the brain, and the functioning of the nervous system deteriorates.

The enzyme peptin cannot break them down completely, and as a result, such a mixture begins to release toxins in the intestinal environment. These toxins enter the bloodstream. This is the simplest rye bread that exists and at the same time incredibly tasty! It has three huge advantages: it is simple and fast, it is very tasty and it is baked with leftover rye sourdough. This bread contains a whole half-liter jar of surplus starter, which I either use to bake pancakes and waffles or reluctantly throw away when I don’t feel like baking at all. And now the issue of sourdough reserves has been completely resolved; rye bread, especially since it is so tasty, I will bake with pleasure as soon as the required amount of sourdough is collected.


If anyone remembers, I once showed delicious rye bread - homemade Lithuanian, which is made by brewing with malt and turns out very aromatic and rich. So this is also Lithuanian, only a simplified version, and I, as it happens, simplified it even more than it was. The original recipe is on Svetlana’s blog, I will also present it here so that you can bake it this way and that way. For this bread you need a dough of 200 g. rye sourdough with 100% moisture content 200 gr. whole grain rye flour; 200 gr. water.

(or 600 grams of ready-made leaven leftovers no older than a week or a dough of 300 grams of water, 300 grams of rye flour and 30 grams of sourdough - for 12 hours) I don’t know how and with what I read this recipe, but by the morning, when I needed to knead the dough, I only had 200 grams. the sourdough starter that I set to mature the night before.

And according to the recipe you need 600 g. sourdough Fortunately, I remembered that I had a whole jar of rye sourdough in the refrigerator, which turned out to be exactly 400 grams and everything came together. In general, if you wish, you can completely use the accumulated starter from the refrigerator in this recipe, but it is advisable in the evening, on the eve of baking day, to make sure that you have enough of it. In total you need 600 gr. rye sourdough with 100% moisture, if it is not enough, leave the required amount to ripen until the morning. For the dough: All sourdough/dough (600 gr.) 150 gr. whole grain rye flour; 150 gr. whole grain wheat; 100-150 gr. water; 35 gr. Sahara; 35 gr. honey; 12 gr. salt; 1 tbsp. cumin. For the jelly, which needs to be used to grease the top of the bread: 1 tsp. potato starch; 200 ml. water. Pour water over the starch and boil for a couple of minutes. I kneaded it in Ankarsrum using a dough hook for about 4 minutes, and this is the dough I got.

After kneading, IMMEDIATELY transfer it into a greased pan. When I bake rye bread, I even grease a non-stick pan with oil, because the dough can still stick. This time I baked in a Pullman and still had to puff to get the bread out. We level the surface with wet fingers and clean the walls of the mold if they are dirty. This is how it worked out for me.

Roasting for 2.5-3 hours at room temperature. Proofing is considered complete when the dough has risen well and bubble holes begin to appear on the surface.

30-40 minutes before baking, preheat the oven to 220-230 degrees, before placing the bread in the oven, grease the surface with cooled jelly. After 15 minutes of baking, reduce the temperature to 200 degrees and bake for another 30 minutes.

At first this bread seems very soft, steam comes out of it and you even have doubts whether it is baked. The main thing is not to cut it while it’s warm, let it sit for 4-8 hours to ripen, after which it will cut perfectly and the crumb will not jam.


I am delighted with this bread, it is incredibly delicious! Freshly ground rye flour, of course, plays a big role here; bread made from fresh flour is so delicious, especially rye! Like candy, like gingerbread, like a real delicacy. And over time, such bread only becomes better and becomes even more saturated with taste. I once found a crust of Lithuanian custard in a bread bin, already dry, you won’t believe how delicious it was! And how I get upset every time when (sometimes there are circumstances) I buy rye in a store, there is no taste at all! What I mean is that if you have a home mill, immediately run to grind rye flour and bake this bread, it’s wonderful! And if not, when buying whole grain rye flour, be sure to look at the production date, the fresher the better. Whole grain flour has a short shelf life, about six months, then the oils begin to go rancid and taste bitter, and before that the flour begins to lose its taste.

UPD. In the recipe I corrected the amount of flour in the dough by adding 50 grams. rye and wheat. If the starter has been in the refrigerator for a long time, it has become more liquid and more flour is needed in the dough.
