You can pickle different vegetables at home.

Ginger

For the marinade you will need a spoon of apple cider vinegar, a couple of spoons of dry red wine, and hot water.

The root needs to be cut and boiled in salted water for a couple of minutes. After draining the water, add marinade. Infuse for several days in a glass container in the refrigerator.

For marinade in 1.5 liters of water you need a couple of tablespoons of sugar and salt, a teaspoon of vinegar, pepper, and spices.

Wash the cucumbers, cut off the “butts” and soak for a couple of hours in cold water. At the bottom of the jar you need to put spices, leaves of fruit trees, dill. Then put vegetables in it and pour boiling water over everything. Leave for a couple of minutes and pour into a saucepan, to which you need to add salt and sugar. Bring the mixture to a boil and pour in the vinegar. And again fill the cucumbers in the tanks with brine.

Tomatoes

For brine, take the same as for cucumbers: spices (pepper, cloves, coriander, bay leaf, currant and cherry leaves), a couple of tablespoons of salt and sugar, vinegar, a few cloves of garlic.

Spices, bay leaves, currants, dill, cloves, coriander, pepper pods and others are placed in jars. Then they put in the tomatoes. Pour boiling water over everything for a couple of minutes. Then it is returned to the pan and brought to a boil. The marinade is filled with jars of tomatoes.

Cabbage

The vegetable needs to be washed and chopped finely. Grate carrots and onions. For the brine you will need a couple of tablespoons of vinegar, salt and sugar, boiling water and allspice, regular pepper and bay leaf.

Place all the vegetables in a jar and add spices. At this time, prepare a marinade from water, vinegar, salt and sugar. Bring to a boil, add vegetable oil. Then everything is filled with brine and the jar is turned upside down for a couple of days. If you prefer it spicy and sour, you can keep it for another day.
