The benefits and harms of cheesecakes, dumplings, cottage cheese casseroles

One of the most popular morning dishes in Russia is cheesecakes. We also very often eat fresh cottage cheese with various fruits or jam, and sometimes we make casseroles. But are cottage cheese dishes really good for breakfast? After all, we are often warned that it is better to eat sweet foods in the middle of the day, and in the morning they raise blood sugar levels too sharply.

Albina Komissarova, an endocrinologist and nutritionist , told AiF.ru about whether cheesecakes are healthy for breakfast :

Cottage cheese is an excellent source of calcium, which is needed daily not only by bones and teeth, but also by every cell of our body, especially the heart and skeletal muscles. First of all, this is relevant during the period of growth and development for children, adolescents, expectant mothers, as well as for the elderly, in order to strengthen the body.

Today there is simply an unreal number of curd dishes, but we want to pay special attention to cheesecakes.

A little about the dish and its calorie content

Cottage cheese dishes are called this way because our ancestors believed that cheese and cottage cheese are the same dairy product. And the recipe for its preparation is hundreds of years old. The word “cottage cheese” entered colloquial speech only in the 19th century, but the dish did not change its name.

The calorie content of 100 g of curd delicacy is about 185 kcal . And if you add a dessert spoon of sour cream to them, then the figure can immediately jump to 300 kcal . This indicator may make people want to give preference to less calorie foods. Especially high calories can frighten those who have extra pounds. But if weight is not a problem, then you can eat cheesecakes during the daytime.

There is no need to be alarmed that the ingredients included in the dessert dish (cottage cheese, flour, eggs, sugar, butter) are very high in calories. Indeed, due to small changes in the recipe, adding some ingredients to the composition, you can achieve a reduction in calorie content and improve the taste of the food.

From low-fat cottage cheese

  • Cooking time: 15 minutes.
  • Number of servings: 4 persons.
  • Calorie content of the dish: 127 kcal.
  • Purpose: for tea / for afternoon tea / for breakfast.
  • Cuisine: Russian.
  • Difficulty of preparation: medium.

According to the classic recipe, you can make cheesecakes from low-fat cottage cheese. To give them an unusual flavor, you can add various spices - cardamom, cinnamon, vanillin. The dessert is very easy to prepare - mix the cottage cheese with one egg and a small amount of flour. The latter can even be replaced with bran. For frying, it is better to use olive oil.

  • low-fat cottage cheese – 500 grams;
  • flour – 100 g;
  • vegetable oil – 30 ml;
  • egg – 1 pc.
  1. Take a comfortable deep bowl in which to place the cottage cheese. Mash the product with a fork so that there are no small lumps left in it.
  2. Next, beat the egg into the curd mass and stir until it reaches a soft, homogeneous consistency.
  3. Then you can gradually add flour, and then knead the dough thoroughly.
  4. Form small balls from the resulting mixture. Roll each piece in flour and fry in hot oil on both sides until golden brown.

Useful properties of the product

Fermented milk foods are very good for health. It is necessary in the daily diet of adults and children. Cottage cheese is easily digestible and has a beneficial effect on the functioning of many internal organs. Therefore, the curd dish called syrniki has nutritional value and is so revered by many people.

The benefits of the food are beyond doubt. There are several main positive qualities:

  • The main dairy component of the dish is rich in calcium . And calcium is good for nails, hair, and the human skeletal system.
  • Regular consumption of cheesecakes during breakfast restores the body's metabolic processes , normalizes microflora and helps break down fat cells.
  • The presence of potassium in the product helps strengthen the nervous system, improves the functioning of the heart and blood vessels.
  • There is a lot of evidence of the benefits of eating cheesecakes for normalizing the functioning of the gastrointestinal tract and preventing the proliferation of putrefactive bacteria.
  • Curd pancakes are recommended for high blood pressure , liver and kidney dysfunction, they help remove fluid from the body.
  • People who, for certain reasons, cannot consume meat or fish protein will find a good replacement in milk proteins, which are present in cottage cheese and have the same effect.
  • Cottage cheese is very useful for children . But since they don’t really like to eat it in its pure form, cheesecakes easily solve this problem.
  • Since cottage cheese pancakes are a very tasty delicacy, after eating them your mood naturally improves.
  • Treating yourself to such a product will be an excellent option when guests come. This easy-to-prepare dessert is something that almost everyone likes, so it will be the most suitable option when meeting with friends.

Alice,

Everyone who wants to lose weight sooner or later asks the question - which method to choose? Most of them are afraid of newfangled methods of treating obesity (surgery, potentially dangerous pills), so they choose between two well-tested, as ancient as the world - between diet and fasting.

Anyone who decides to lose weight should, at least in general terms, imagine the picture of energy exchange in the human body and the features of this process during diets, therapeutic fasting and physical activity.

Meanwhile, school courses in human anatomy and organic chemistry provide too little knowledge to understand the process of energy exchange. Human biochemistry is studied in quite detail in medical institutes; True, most of those losing weight did not study at medical universities and did not take this course. It was not possible to find books with the title “Popular Biochemistry” or “Entertaining Biochemistry” (although there are books “Entertaining Mathematics”, “Entertaining Physics”, “Entertaining Microbiology”). Therefore, the proposed lessons will be relevant, interesting and useful to those who are losing excess weight, in order to generally understand the processes taking place in the body.

Before you begin to consider any specific biochemical process, you need to learn a few simple rules that govern all processes occurring in the body. It turns out there are not so many of these rules. Only five! However, they allow the use of logical thinking in the study of both a separate biochemical process and all biochemistry as a whole.

LESSON ONE

And then it turns out that this science is not as scary as it is “painted”, that all the huge variety of chemical reactions occurring in the body is easily systematized according to the laws of a unique biochemical logic. It is interesting that even the very name of this science, Biological Chemistry, can be interpreted, with a certain degree of humor, as Bio-Logical Chemistry, i.e. Logical chemistry of a living organism.

Biochemistry (biological chemistry) is a science that studies the chemical nature of life processes, the totality of which is commonly called metabolism, and the connection of these processes with the activity of organs and tissues of living organisms. Modern biochemistry developed at the turn of the 19th and 20th centuries, when the achievements and methods of organic chemistry, physiology and some other sciences that studied various aspects of organic life merged. In particular, organic chemistry, the subject of study of which is carbon compounds in general, as well as the analysis and synthesis of substances that form living tissues, formed the basis of the so-called static, or structural, biochemistry (i.e., the branch of biochemistry that deals with the study of natural organic substances, their analysis and synthesis). The study of the chemical processes underlying the life activity of the body resulted in the formation of dynamic biochemistry. Dynamic biochemistry is much closer to medicine and physiology than to organic chemistry. That is why biochemistry was initially called physiological, or medical, chemistry.

FUNDAMENTAL RULES OF BIOCHEMICAL LOGIC

Rule 1. Enzymes accelerate only spontaneous reactions

First of all, it should be noted that all processes occurring in a living organism are subject to general physical and chemical laws operating in nature. Therefore, the laws of thermodynamics, chemical kinetics, catalysis, etc. certainly apply in a living organism. At the same time, certain restrictions are imposed on the manifestation of these laws due to the conditions under which reactions occur in the body. This is a relatively low temperature, close to neutral acidity values, etc.

Of great importance for understanding all biochemistry is the fact that reactions occurring in the body are catalyzed by enzymes. Enzymes are proteins by chemical nature, with all their inherent properties such as thermolability, sensitivity to the concentration of hydrogen ions in the medium, and high specificity. At the same time, enzymes also have the properties of inorganic catalysts. They cannot cause reactions that do not occur in nature for thermodynamic or structural reasons. They do not shift the chemical equilibrium in the system, i.e. accelerate both forward and reverse reactions.

Based on these considerations, the first rule of Biochemical logic was formulated.

Rule 2. The substrate must be activated to enter the biochemical process

This rule follows from general chemical laws - in order for even a spontaneous reaction to begin, it is necessary to overcome a kind of energy barrier that prevents the molecules of the reactants from interacting. When we carry out any chemical reactions in a test tube, for example, a qualitative reaction on an aldehyde group in a glucose molecule, we heat the reaction mixture in the flame of an alcohol lamp. Thus, we increase the kinetic energy of the molecules of the reacting substances.

Obviously, this method of overcoming the energy barrier of a chemical reaction is not acceptable for a living organism, since proteins cannot withstand high temperatures and denature.

The body uses special high-energy compounds to increase the energy of substrates, which is a universal battery and a direct source of energy for a wide variety of processes.

What is negative about curd delicacy?

The first thing you need to remember when the delicious flatbreads are prepared is that it is not recommended to overuse them , especially for people who strictly watch their figure. Cheesecakes are a tasty product, but high in calories. Two or three pancakes eaten at breakfast will be accepted by the body normally, but if the dose is doubled, problems with extra pounds are possible. Other possible side effects and contraindications include the following:

  • Individual intolerance to the components of the product will not allow you to enjoy this popular delicacy.
  • After eating cheesecakes prepared by catering establishments, heartburn . Cooks in cafes or canteens often use low-quality oil for frying, which will cause a corresponding reaction in the body.
  • In some cases, manifestations of bloating and gas formation are possible.

Thus, a properly prepared dessert and eaten in reasonable quantities will cause virtually no inconvenience to those who love cottage cheese pancakes. And to make the delicacy even more enjoyable, you can add something to your taste.

Cheesecakes: proper nutrition

Eggs are rapidly gaining momentum, and gluten-free and high-protein products are taking the world by storm. To top it all off, convenient, great-tasting recipes for weight loss are an evergreen and always will be.

See how the puzzle falls into place? Since curd pancakes or cheesecakes are on top of all these trends, they are sure to become the most popular breakfast in the world! And, if you still doubt this, let's move on to the health section.

The famous nutritionist Dukan has developed his own nutritional system, thanks to which you can easily lose weight. The first stage of the diet is called attack, when you need to eat a lot of protein foods. Cheesecakes with bran instead of flour are one of the recipes suitable for this phase. The composition of the dish will not cause any difficulties. The flour is simply replaced with oat bran, and the new recipe is ready. For serving, it is better to use creamy cottage cheese, which will be used instead of sauce.

Ingredients:

  • egg - 1 pc.;
  • sweetener - to taste;
  • low-fat cottage cheese - 250 g;
  • vanillin - 0.5 tsp;
  • oat bran - 1 tbsp.

  2. Divide the resulting mixture into small molds.
  3. Place in the oven, bake at 180 degrees for about 15-20 minutes.

Cooking tips

Every housewife uses various tricks to prepare fluffy and delicious curd pancakes. Here are a few of their secrets:

  1. The main component of the food - cottage cheese - must be homemade or purchased from trusted farmers . The low-fat version from the store will not work; it will only produce a weak semblance of the product.
  2. To prevent the cottage cheese from sticking to the pan and falling apart, it should be kneaded by grinding it with flour. They do not put a lot of curd into the dough so that the food does not turn out tough.
  3. To make the cakes fluffy, slightly diluted citric acid is added to the dough.
  4. You should not beat too many eggs into the prepared mixture, otherwise the pancakes will lose their softness. To reduce calorie content, eggs are excluded from the recipe, and instead, a spoonful of milk or low-fat sour cream is added.
  5. Frying the flatbreads should be done over medium heat and in ghee, then they will fry evenly without burning.
  6. Cheesecakes are cooked steamed, in the oven or in a frying pan. The last method is the fastest - only a couple of minutes per side, but also the most harmful to the body. But baked goods from the oven will be perfectly digested by the stomach.

I would like to hope that in this fast-paced age, when new recipes for preparing all kinds of dishes appear every now and then and restaurants of overseas cuisine are opened one after another, this grandmother’s favorite delicacy from childhood will bring joy to connoisseurs of tasty and simple food.
