Classic recipe

Various methods are used to produce fermented milk products:

  • traditional;
  • acid rennet;
  • separated.

To make cottage cheese, both homemade milk and store-bought milk are used. Homemade milk can be either cow's or goat's. Goat milk contains less milk sugar - lactose, it is easier to digest, does not cause stomach upset and can be useful for people with poor lactose tolerance.

Goat's milk cheese has a high content of vitamin B12, cobalt, potassium, protein and fat. Homemade milk contains much more lactic acid bacteria, which accelerate the process of milk souring.

It is important to pay attention to the color of the milk: it should be rich white or yellowish with a pleasant smell, without sourness. Store-bought milk must have at least 3.2% fat content.

Several methods are used to ferment milk:

  1. Self-fermentation. Milk must be placed in a warm place. Sourdough is not used in this case. Milk is fermented by lactic acid bacteria. Raw homemade milk must first be heat-treated by heating it to 70 °C. It is very important not to bring to a boil. Next, the milk needs to be cooled. Pasteurized store-bought milk can be used immediately, it is important that it is at room temperature. The process lasts at least a day.
  2. Using sourdough. Use a special starter for cottage cheese (1 bottle per 3 liters), which is sold in the store, ready-made yogurt, full-fat sour cream or kefir (125 g per 1 liter). The starter can be replaced with lemon juice (125 g or 3 lemons per 3 liters of milk) or citric acid (17 g or 2 tsp per 3 liters of milk). Before preparing for disinfection, milk should be heated to a temperature of 70 °C. From 3 liters of milk you will get about 500-700 g of cottage cheese.

Composition of ingredients

To prepare a dairy product you will need:

  • homemade milk – 3 l;
  • sour cream 25% fat – 3 tbsp.

Step-by-step cooking process

  1. To prepare a fermented milk product, you need to take 3 liters of homemade cow's milk and carry out heat treatment, heating the milk to 70 °C.
  2. After the milk has cooled, to speed up the souring you need to add 3 tbsp. l. fat sour cream. Next, you should put the jar in a warm place. In summer, souring occurs faster; in winter, it may take up to 2 days.

  3. When the milk turns into curdled milk, you need to pour it into a saucepan, after rinsing the dishes with cold water. It is better to take an aluminum or stainless steel container with a thick bottom for cooking. It is better not to use enamel cookware to avoid burning. You can put the jar in a water bath.
  4. Place the pan on the stove and start heating. It is necessary to stir the yogurt lightly. The curds will begin to separate from the whey. It is very important not to bring to a boil. In this case, the cottage cheese will turn out hard and dry.
  5. When the process of separating the curd is finished, you need to remove the pan from the heat and cool. Next, you need to place gauze folded in several layers at the bottom of the colander, drain the curd whey and let the liquid drain.

To speed up the process, gauze with cottage cheese can be pressed with a press. Homemade cottage cheese is ready.

What goes with it?

Cottage cheese can be an independent product. You can also prepare snacks from it, add it to salads, make cottage cheese, casseroles, baked goods, and cold soups. If you use a product purchased in a store, be sure to pay attention to the manufacturing date.

In appetizers it can be combined with herbs, garlic, avocado, cucumber, and pomegranate. You can add sour cream, honey, dried fruits (raisins, dried apricots, prunes), fresh fruits, nuts, grated chocolate to natural cottage cheese.

How to serve a dish

Cottage cheese goes well with both salty and sweet foods. If it is served as a savory dish, you can garnish it with herbs. Lettuce, arugula, dill, parsley, and green onions work well. You can put a few olives or black olives.

If the product is served as a dessert, bowls are used. The dish looks beautiful in black dishes. You can decorate with chocolate pieces, whole berries, and whipped cream.

Application

It is used not only in medicine. This miracle product has been known to the Slavic peoples for a very long time. Even our grandfathers and great-grandfathers created a tasty and healthy product from milk, which was soon used in all possible variations. These are delicious salty snacks or sweet aromatic pastries made from cottage cheese, which were made earlier and are not forgotten now, for example, many people still prepare Easter cake to this day. This is an important attribute of church celebrations and rituals.
