This is a drink that is made from whole cow's milk. Lactic acid bacteria are added to it. In Ukraine, this drink is prepared by adding cream to fresh cow's milk. After which this mixture is poured into pots and the drink is placed in the oven to simmer. The temperature in the oven is quite high, but the drink is not brought to a boil. It just takes a long time to heat up. After the milk turns caramel color, it is removed from the oven. The mixture is cooled and sourdough is added to it, but sour cream is often used for this. It is simply added to the resulting product and left for six hours in a warm place. In production, special bacteria are used. The drink has a sour taste and has a brown tint.

It was in Ukraine that people first began to make this amazingly tasty drink. The name ryazhenka comes from the word “yarn” (fry). The color changed because the milk contained some sugar, and at high temperatures it began to interact with proteins. Due to this, the color of the milk changes.

At home, this product can be prepared from already prepared baked milk. You just need to add sour cream to it and leave the product for several hours to ferment.

Cooking secrets

Previously, a mixture of milk and cream was simmered in large stone ovens, without boiling, until it acquired a light creamy tint. The thing is that the sugar contained in milk reacts with proteins when heated and forms the antioxidants melanoidins. They are what give baked milk its characteristic creamy color and delicate caramel flavor. Then sour cream was added to this mixture for ripening and in the process a new product was obtained - fermented baked milk.

Nowadays, of course, instead of ovens, microwaves, electric or gas ovens, yogurt makers and multicookers are used. Thermophilic lactic acid bacteria - streptococci and some types of Bulgarian bacillus - are often used as starter culture. Fermentation usually takes place from 3 to 6 hours. At the end of the process, fermented baked milk acquires its creamy caramel hue and characteristic fermented milk taste. In fact, it is a type of yogurt.

Application

This drink is consumed as a stand-alone drink. Ryazhenka can perfectly quench thirst and hunger, but before eating it you need to warm it up a little. If this product is homemade, then it is eaten with a spoon, as it is thick.

To prepare this product you will need:

  • baked milk - 1 liter;
  • ready-made starter - 1 bottle.

Baked milk does not need to be brought to a boil, but many still play it safe. So, bring the milk to a boil, cool to 30-40 degrees, add the starter and mix thoroughly. Afterwards, pour the product into special molds or into a multicooker bowl and turn on the “Yoghurt” program for 6 hours. Instead of a slow cooker, you can also use a yogurt maker.
