Step 1:

Pour not very cold kefir into the bowl, add soda, sugar, salt, stir well.

  • 1 cup or a little more semolina

Lightly beat the eggs with sugar and combine with kefir and salt, add semolina and stir with a whisk until the dough is homogeneous without lumps. Take a level tablespoon of the mixture and place it in hot oil. Help yourself with a teaspoon. Thus, lay out as many pieces as will fit in the frying pan. There is no need to place them very close to prevent them from sticking together.

3. During frying, oil temperature is very important. When you put the dough in it, it should “respond”, in other words, “crackle”. If there is no response, the dough is laid out, but it just lies like a flat cake, then don’t expect lush baking. Moreover, such products absorb a lot of oil, which means they will fall off after baking.

If the fire is high, then the crust below will quickly fry and you will have to quickly turn the workpieces over. As a result, they will not have time to rise - one, and bake inside - two.

4. Set the heat to a little less than medium. Fry on one side for about 2 minutes. The readiness is checked not only by the brownness of the bottom crust, but also by the fact that bubbles will begin to appear on top and burst. 6. The second side cooks a little faster than the first. But sometimes the same amount, that is, 1.5-2 minutes. Monitor the heat and, if necessary, adjust the heat by decreasing or increasing the heat level.

7. Remove the finished products using forks and place them on paper towels to rid them of excess oil. Let them lie there for 5-7 minutes. That is, until we are working on the second batch.

8. Similar to the first one, lay out the second batch and the next one. Fry all products.

It happens that one of the subsequent batches requires adding oil. Add it along the edge of the pan so as not to reduce the heat level. You can additionally heat it for a minute.

9. Place the finished pancakes, from which excess oil has drained, into a bowl and serve.

Prepare an additive for them in advance - sour cream, honey or jam. With any of the additives, the pancakes will get more variety in taste. Use powdered sugar for decoration. Serve with slices of banana, apple or other fruits and berries.
