I am waiting. As soon as the white is ready and the yolk is raw, I remove it with a large spoon. The most important thing is that the yolk does not spread.

How to cook
Step 1:
Turn the oven to 240°. Clean the mushrooms and chop them finely.
Step 2:
Fry the chopped mushrooms in a very hot frying pan without oil. Stir them constantly. The pieces should decrease in size and change color. During frying, excess liquid will evaporate.
Step 3:
Grate Parmesan on a fine grater. Chop the onion.
Step 4:
Separate the egg yolks from the whites. This must be done very carefully, otherwise the dish will be spoiled. Not a single drop of yolks should get into the protein mass.
Step 5:
Beat the egg whites with a mixer. They should turn into a fluffy snow-white mass. This will take 7-10 minutes. At the end you will need to add a pinch of salt.
Step 6:
Carefully pour the grated cheese, cooled mushrooms and green onions into the bowl with the whites. Pepper, mix carefully so as not to damage the foam.
Step 7:
Line a baking sheet with parchment. For convenience, you can use a silicone mat. Place three protein clouds on it. In the middle of each of them, make a recess for the yolks. Place the dough in the oven for 3 minutes.
Step 8:
When the whites are partially cooked, remove them from the oven. Place the yolks into the prepared holes with a spoon. Return the scrambled eggs to the oven for a couple more minutes.
You should not put bacon and mushrooms in the scrambled eggs at the same time, otherwise you will lose their light and airy texture. Parmesan can be replaced with other hard cheese, but it is better to prepare the dish with it. If possible, use sea salt instead of regular salt.
