Feta
This cheese is prepared according to traditional Greek recipes. To get real cheese, you should use only sheep's milk. According to an old recipe, the milk that had just been given out was poured into a bag from the stomach of a goat, and resin from fig tree branches was added to it. Today, when preparing, a starter is used to curdle the milk faster. After the whey has been drained, the wet mass is placed in linen bags and pressed. When the mass dries, it is cut into pieces and placed in brine. The calorie content of this cheese is 264 kcal/100 g.
Mozzarella
This incredibly tasty Italian cheese is usually made from buffalo milk. Curdled milk is placed in warm water, where it becomes very elastic and eventually breaks down into fibers, which in turn, when placed in hot water, curl into balls. This is what mozzarella cheese looks like. It has a snow-white hue, a sour taste and the smell of milk. Such cheese is placed and stored in whey or brine, but its shelf life is rather short. Some cheese makers prefer to smoke this cheese, thereby prolonging its storage. In the modern world, it is customary to make this cheese from cows' milk, but its taste has nothing in common with mozzarella made from buffalo milk. The calorie content of curd cheese is 280 kcal per 100 g of product.
Basic recipe from scratch
The recipe for Almette curd cheese at home using the simplest ingredients looks like this:
- 500 grams of fresh cottage cheese;
- 280 grams of yogurt without additives;
- salt to taste.
Some chefs replace yogurt with butter, but then the cheese becomes more calorie-rich, which is not very welcome for women losing weight, because the calorie content of cheese is already quite high, and in combination with the main dish (even if it’s a simple cracker) it will be prohibitive.
Also, as a rule, various products are added to this type of cheese to give the cheese a flavor. This can be fresh herbs, small pieces of ham or mushrooms, paprika or chili peppers, pickled cucumbers and much more at your discretion.
Creamy
Hochland Kremette is one of the cream cheeses with a light, delicate taste and interesting structure. It contains cottage cheese, pasteurized milk, milk-clotting enzyme, and bacterial starter culture. It should not contain any flavorings or harmful additives. The calorie content of Hochland Kremette is 297 kcal. Curd cheese is widely used in cooking and confectionery. Its taste goes well with the taste of fish. Due to the fact that it can easily be given the desired shape, it is often used for making rolls.
Kinds
Numerous varieties of hard cheeses are produced using two methods: boiling or drying with the addition of lactic acid bacteria and enzymes that stimulate the milk coagulation process. This product can mature from three months to three years.
Extra-hard cheeses are used to prepare gourmet dishes either in grated form or in small crushed pieces. They are also served ready-made in thin shavings as an appetizer with wine. The varieties of hard cheeses include: naturally ripened cheeses (Gouda, Edamer, Maasdam), gourmet blue cheeses (Blau Bastianse, Delfts Blau), peasant cheeses (Beemster, Stolweiker) ), smoked (“Gouda”) or with a red rind (“Doruvael”). The calorie content of hard cheese depends on its fat content, which in Parmesan is 32%, in Dutch cheese - 45%, in Swiss cheese - 50%. It is known that the higher this indicator is for a popular fermented milk product, the tastier it is.
With greens

The product has a very delicate, textured curd-creamy consistency, an unusually rich aroma and a pleasant taste with a barely noticeable curd sourness. The cheese spreads perfectly, does not spread and retains its shape. Sold in plastic packaging with a lid under which there is foil. This product can be stored for up to 4 months, open packaging should be used within a week if stored in the refrigerator. The composition of curd cheese with herbs includes milk (cream), cottage cheese, bacterial starter, a special enzyme of microbial origin, salt, vegetables, milk powder, onion essence, citric acid. The product contains vitamins and minerals. The calorie content of cheese per 100 g of product is 212 kcal.
Its use can provoke allergic reactions due to the fact that it contains milk protein. In addition, it is quite high in calories, so it should be consumed in moderation. Curd cheese is used as a snack in combination with vegetables.
Use in cooking
Due to its properties and pronounced taste of cream, Almette curd cheese is added to a variety of culinary recipes - desserts or snacks, first and second courses. It adds a delicate taste to sauces for meat and salads. You can bake meat and fish with Almette. It is added to taste in batter and dressing; different housewives come up with a signature recipe with cheese. The composition of Almette allows you to complement a dish with seafood to balance the healthy elements in the dish. The product is often used in sauce - the cheese is melted, melted, enriched with its own additives and spices for seasoning hot food.
The curd delicacy is also added to first courses:

Chefs use Almette for salads - hot and cold, as a dressing or part of a mixture. It is universal - complements the taste of seafood, vegetables and meat products. This is an addition to spicy salads that balances the heat and makes the dish more enjoyable. The variety of flavors allows you to experiment with the additive - vegetable and garlic Almette can be included in meat salads. Curd cheeses with mushrooms and herbs enhance the taste and aroma of classic salads. Fish products are complemented by the flavors of pickled cucumbers.
