For preparation you will need: 1l. kefir, a bunch of sorrel, 3 eggs, 1 cucumber, 3 radishes, herbs, garlic, boiled meat (chicken and beef).

Wash the greens thoroughly and boil the eggs. Finely chop the sorrel, fill it with water and bring to a boil, cook over low heat for 7 minutes. Cool the resulting broth.

Chop the greens, add salt and mash with a fork in a wooden bowl. Green onions will release juice, and their pungent odor will be neutralized. Grate the cucumber and radish on a coarse grater, finely chop the eggs and meat.

Pour the greens into the pan with the cooled sorrel, add a little sugar, eggs, vegetables and meat, stir. Pour in kefir and stir again.

Buckwheat porridge with kefir

We form the bread. Stretch the dough into a layer, then wrap the edges towards the middle with an “envelope”, forming a rounded loaf of bread. Place the bread on a baking sheet lined with baking parchment and make cuts with a sharp knife. Cover with a napkin and leave to rest for another 1 hour.

Preheat the oven to 200 degrees and place the rested bread there to bake until done. It took me 30 minutes. Be guided by your oven. Take out the bread and let it cool completely if possible))). The bread turned out weighing 580 g.

  2. Leave the bowl at room temperature for a short time to allow the dough to rise.
  3. This time is just enough to heat the pan and prepare various flavorings for the finished dish.
  4. Pour the dough onto the hot surface with a tablespoon. Fry over low heat until golden brown.

Send the finished dish to the table immediately. Sour cream, whipped cream, jam, powdered sugar can be served separately, or placed on top of golden “flatbreads”. It turns out very tasty if you grease each honey pancake with honey!

Kefir pancakes without eggs

It is believed that eggs are an essential ingredient in pancakes. Actually this is not true. Delicate pancakes are obtained without eggs. Moreover, the more acidic the kefir, the better the final result.

  • Kefir – 250 ml.
  • Flour – 160–180 g.
  • Table salt – 1/3 tsp.
  • Soda – ½ teaspoon.

First, combine kefir and soda and set them aside for five minutes. Then add the rest of the ingredients and mix to form a smooth dough. Leave it to “rest” in a warm place, this will start the fermentation process faster. Vigorous fermentation guarantees that the pancakes will be as fluffy and airy as possible. Fry in hot oil.

Pancakes prepared according to this recipe hold their shape well and remain fluffy even after cooling.

Lemon-honey pancakes with kefir

Products for 6 servings:

  • Kefir – 1.5 cups.
  • Flour – 2 cups.
  • Honey – 3–4 tbsp. l.
  • Lemon – 1 pc.
  • Soda – 1 tsp.

Preparation

  • Stage 1: mix kefir with soda, move aside for 5 minutes. During this time, wash the lemon, remove the zest from it, and squeeze out the juice.
  • Stage 2: combine the chopped zest with kefir, add lemon juice and honey, mix thoroughly.
  • Stage 3: add flour in several additions, mix until smooth.

You can start frying immediately after kneading the dough, but it is better to let the dough sit for a couple of minutes so that as many bubbles as possible appear on its surface. Even though there are no eggs in this recipe, the pancakes are thick, soft and fluffy.
