  1. Grind 1 carrot on a coarse grater.
  2. Rinse 20 g of raisins in hot water.
  3. Grind 20 g of walnuts in a mortar.
  4. Combine all ingredients, add 1.5 tbsp. l. honey, juice of ½ lemon, mix. Leave for 20 minutes covered.
  5. Peel and core 2 apples and cut into thin slices. Add to salad, stir.

It turns out to be a very tasty dietary dish.

On a diet, carrots can be eaten simply raw or boiled, grated or cut into cubes, but there are also specific recipes for dietary dishes. They will allow you to diversify your menu and make dieting less difficult. All carrot dishes should be prepared immediately before consumption.

Salads

Doctors advise eating salads as a first or second breakfast, and if they are not seasoned with sour cream/yogurt, then for dinner. The simplest, healthiest and most accessible recipes are:

  • Carrots with white cabbage. Grate the carrots on a coarse or fine grater, chop the cabbage into thin strips, and chop the onion into half rings. All ingredients are mixed, vegetable oil, lemon juice and pepper/salt are added to the mixture to taste. You can add any finely chopped greens to the dish. You can dress the salad with sour cream with a minimum percentage of fat or natural yogurt.
  • From boiled carrots. The vegetable is boiled together with several cloves of garlic until tender, then cut into large cubes. Add ground black pepper, lemon juice, vegetable oil and salt to taste to the carrots; you can chop and add 1-2 cloves of garlic to the dish. Before eating, this salad should steep for 1 hour. It is better to cook it from warm, almost hot, carrots - it will absorb all the flavors of the seasonings.
  • With beets (“Metelka”). Grate fresh carrots, beets and black radishes for Korean salads. Add 1-2 cloves of garlic, vegetable oil, and spices to taste. An excellent solution would be to use pumpkin oil for the dish - for a salad of 300 g, 1 teaspoon is enough for dressing. Additionally, you can flavor everything with lemon juice. Instead of black radish, you can use white cabbage, shred it into thin strips.

Cottage cheese with carrots

As a dietary dish, you can use raw carrots grated on a coarse grater and cottage cheese - they are simply mixed in a bowl, a small amount of low-fat sour cream or natural yogurt and any spices are added. This “salad” can be eaten for breakfast and lunch, but it is better to avoid such a dish for dinner.

Cottage cheese with carrots will be useful for weight loss and in the form of a casserole. To prepare it you will need:

  • cottage cheese 150 g (maximum 9% fat);
  • 1 egg;
  • 20 g sugar (level tablespoon);
  • sour cream 20% - tablespoon (about 20 g);
  • semolina 15 g (heaped tablespoon);
  • carrots 50 g;
  • milk 50 ml;
  • butter 1 tablespoon;
  • vanilla to taste.

Rub the cottage cheese through a sieve, grate the carrots on a fine grater (not puree), mix everything and add the egg yolk, semolina, and sugar. Beat the egg white with a mixer and add this mass to the “dough”. Mix everything carefully and place in the mold, after greasing it with butter. The casserole is baked for 15-20 minutes at a temperature of 200 degrees. Served with sour cream.

With apple

For variety, you can prepare a carrot and apple salad - the taste is quite interesting, can be used as a dessert and eaten as an afternoon snack or as a second breakfast. What should be done:

  1. Peel and grate medium-sized carrots on a coarse grater.
  2. Peel 2 apples (if desired) and cut into thin strips.
  3. Sprinkle the apples with lemon juice and stir - this will protect the fruit from darkening in the air.
  4. Combine carrots and apples in a bowl, add 1 tablespoon of natural yogurt to them.
  5. Add ground cinnamon and sugar to taste.

Carrot salad with apple

Salad “Curly” with carrots, apples and crab sticks

This is a puff dish, for serving which it is better to use a special mold.

The salad consists of the following components:

  • 1 carrot
  • 1 apple
  • 200 g crab sticks
  • 2-3 boiled eggs
  • 150 g canned corn
  • mayonnaise - to taste

It is very simple to prepare this dish:

  1. Wash the carrots and apples, peel them and grate them.
  2. Boil the eggs, peel and cut into small cubes.
  3. Chop the crab sticks into cubes too.
  4. Start laying out the layers: carrots, apples, eggs, crab sticks.
  5. Sprinkle corn on top and garnish with herbs.
  6. After each layer, make a mayonnaise mesh.

Place the salad in a mold, then put it in the refrigerator until it is well soaked. After an hour or two you can serve it.

Multilayer salad with carrots, apples, eggs and cheese

Ingredients

  • 4 eggs
  • 2–3 carrots
  • 2 apples
  • 100 g hard cheese
  • juice of half a lemon
  • 5 tbsp. l. natural yogurt

Preparation

  1. Boil the eggs hard, peel and grate.
  2. Peel the carrots and apples and grate them.
  3. Grate the cheese.
  4. Place a serving ring in the center of the plate and lay out in layers: 2/3 carrots, top with a mesh of natural yogurt, eggs, mesh of yogurt, apples, mesh of yogurt, cheese, mesh of yogurt.
  5. Place the remaining carrots on top.
  6. Leave the salad for 20-30 minutes until all the layers are soaked in the yoghurt, then carefully remove the serving ring and serve.
  7. Bon appetit!

Look at the time! This is probably the fastest salad recipe in my arsenal. The only faster way to do this is to pick Iceberg lettuce with your hands.

Ingredients:

  • Carrots – 250 grams
  • Apples – 120 grams
  • Honey – 6 grams (1 coffee spoon)
  • Water – 40 grams

Carrots can be of any variety, just not huge fodder ones; the variety of apples is not important. I took honey in bulk from the market.

Healthy salad with radish

Radish is a storehouse of vitamins; this root vegetable is especially popular in winter. And preparing a salad with carrots, apples and radishes is very simple. This recipe does not take much time, but what an excellent result it turns out.

Required:

  • Apple – 165 g.
  • Carrot – 145 g.
  • Radish – 150 g.
  • Sour cream – 50 ml.
  • Sea salt - to taste.
  • Spices - to taste.

How to cook:

  • Do not remove the skins from the apple, but peel the carrots and radishes.
  • Rub the peeled products with a large straw.
  • Chop the apples into small cubes. Mix in a deep plate. Pour sour cream over the products, add salt and spices to your personal taste.

NOTE: For dressing, you can use unsweetened yogurt or yogurt.

What do these salads look like?

To prepare the first option you need a kilogram of carrots. Vegetables should be grated on a medium grater, then seasoned with a tablespoon of honey and a squeeze of lemon.

The key point here is that carrots can be consumed in quantities of more than a kilogram, but the amount of lemon juice or honey cannot be increased.

This salad should not cause any discomfort to the body. Thus, you can not only be healthy for your figure, but also eat deliciously.

To prepare the second option, you will again need 1 kg of grated carrots. Chopped fruits are added to it. You can choose them at your own discretion.

Take, for example, grapefruit, orange and apple or a few kiwis. Finely chop the selected fruit (it is better to choose one), then mix with carrots and season with a spoon of honey and, as in the previous case, squeeze out one lemon. You can complement the picture with olive oil.

Well, let's start, of course, with the central ingredient, that is, with carrots. Carrots are a plant of the Umbelliferae family that produces roots and seeds. Moreover, the former are used for food, and the latter for the production of medicinal tinctures and mixtures. Carrots can be called a very common plant. It is easy to find in Africa, America, Australia and even New Zealand. Carrots are not uncommon in Europe either. Each of us knows and loves her since childhood. No one can imagine a soup without carrots or, for example, a roast. And what is a fresh carrot salad worth, one of the variations of which we will offer you today, or a carrot cake? We can say that this particular vegetable accompanies us throughout our lives, almost from birth to late old age. Historically, Afghanistan is considered the birthplace of carrots, and you will be surprised to learn that then carrots were not orange, as we are used to. In those days you could find purple, yellow and even white carrots. At the same time, there is information that this crop was also cultivated in Ancient Rome and Greece, where carrots were considered not only a tasty food, but also an equally useful medicine. But it acquired its original color only in the 16th century thanks to Dutch breeders, who are generally considered to be the creators of the product we are all familiar with. Later, this bright and cheerful vegetable came from Holland to England, and then spread throughout Europe to become one of the foundations of our diet today.

What does the product go well with?

To consistently lose weight, carrots in dietary salads should be combined with the following products:

  • kiwi, orange, lemon, lime, grapefruit, green apples, avocado;
  • cabbage, cucumbers, zucchini, tomatoes, onions, beets;
  • greens: dill, parsley, basil, mint, etc.;

The amount of potatoes, rice and other starchy ingredients in dietary carrot salads should be reduced.

Preparation

  1. Boil the carrots until soft and cut them into small cubes.
  2. Cut the ham, cucumbers and peeled apples into cubes.
  3. Add peas and mayonnaise, stir.

Soft apple cookies

Ingredients for 2–4 servings

  • 150 g softened butter
  • 1/2 cup sugar
  • 1 egg
  • 1 ½ cups flour
  • 2 large apples
  • ½ tsp. soda
  • 1 tsp. cinnamon
  • nutmeg on the tip of a knife
  • cardamom on the tip of a knife
  • a pinch of salt

Preparation

  1. Wash the apples, peel and cut into small pieces.
  2. Mix flour, soda and spices.
  3. Using a food processor on medium speed, beat the butter, sugar and egg until smooth. Add apples and flour with spices.
  4. Using two tablespoons, place the cookies on a baking sheet lined with baking paper or a silicone mat. Use one spoon to scoop out a little dough and use the other to remove it onto a baking sheet. Leave a small distance between cookies.
  5. Bake at 180 degrees for about 25 minutes. Make sure the cookies are browned but not burnt.

Comments

This recipe produces soft and very aromatic apple cookies. If your family loves baking, feel free to prepare a double portion. Apples can be grated without a grater, but I like them better when they are cut into small pieces. This gives the cookies an interesting texture and slight sourness.
