  3. Afterwards, the jar is closed to prevent the entry of foreign microorganisms from the outside, as well as to provide a uniform climate for the development of kefir grains.

It is worth remembering that during the fermentation process, bacteria release carbon dioxide as a product of oat processing, so closing the jar with a metal lid is not the best idea (the jar may explode under gas pressure).
