Cucumbers are 96% water, 1% dietary fiber, and the remaining 3% are carbohydrates and proteins in a ratio of 3 to 1. The proportion of fat in them is only 0.1%. Therefore, the calorie content of cucumbers, depending on growing conditions, varies from 10 to 14 kcal.

When pickled or pickled, cucumbers lose half of their vitamin substances. But the content of micro- and macroelements in them remains the same, as does the ratio of BZHU (proteins, fats and carbohydrates). The content of sodium and chlorine increases: the daily norm of these elements can be obtained from just 100-150 g of pickles.

Important! Homemade pickled cucumbers are more beneficial. For pickling and salting, dill umbrellas, horseradish root, garlic and leaves of cherry, oak, and black currant are used.

Thanks to them, cucumbers are saturated with tannins and essential oils, which are also good for health.

Store-bought products contain more preservatives, so they are less beneficial.
