Good afternoon, my beloved readers. I know that among you there are a large number of home baking lovers. Therefore, today I will share with you a series of oatmeal cookie recipes. I've heard different reviews about it, and the main complaint is that it often turns out tough. It is for this reason that we will cook it with cottage cheese. It makes the dough structure tender and soft.

Good news for those who don't like to stand at the stove for a long time. This delicacy will take very little time to prepare. On my blog you can also find recipes for quick sour cream cookies.

Preparing such a delicacy is not very difficult, there are absolutely no tricks, even a novice cook can handle it. A simple list of ingredients makes this baked product accessible to everyone.

Oatmeal cookies with cottage cheese - a very tasty recipe at home

A wonderful quick recipe. The process of kneading the dough will take no more than five minutes, so I recommend immediately setting the oven to preheat. If you have little helpers, you can safely involve them in the process. These cookies, accompanied by a glass of milk, are perfect for breakfast.

Ingredients:

  • Oatmeal - 150 gr.
  • Wheat flour - 120 gr.
  • Cottage cheese - 200 gr.
  • Sugar -50 gr.
  • Large eggs - 2 pcs.
  • Butter - 50 gr.
  • Salt - 1/4 tsp.
  • Vanilla extract - 1 tsp
  • Baking powder -6 g

Method of preparation: Prepare a deep container for kneading the dough. Break 2 eggs into it, add salt, sugar and stir with a whisk. Add oatmeal and melted butter to the mixture.

After mixing everything, add cottage cheese and vanilla extract to the mixture.

Next, sift the flour together with baking powder. Mix everything thoroughly. The dough should not be very thick, but at the same time viscous and retain its shape.

Line a baking sheet with parchment paper or cover with a special silicone mat. Using a spoon, place the pieces at a distance from each other, because during heat treatment it will increase in size.

The lumps should be about the size of a walnut. Place the baking sheet in the oven preheated to 180 degrees for about 15-20 minutes.

The cookies turn out tasty and tender. You can decorate the top of the baked goods with powdered sugar. To keep the treat soft for a long time, store it in a tightly closed container.

Another recipe and a wonderful story from our reader. It’s true, I’ve already made oatmeal cookies without flour, so this time I decided to experiment and added... cottage cheese to the cookie dough. I was worried whether it would work or not, but the result exceeded expectations and the experiment was a success. Diet oatmeal cookies with cottage cheese turned out wonderful.

*****

“This funny story happened to me when I was about three years old, and my brother was one and a half years old at that time. I know this story more from the words of my uncle, who was a direct participant in this action.

In the summer, my brother and I were always left with our uncle, who is eleven years older than me. One day, on one of these days, we all decided to bake oatmeal cookies in the oven and serve them still warm with cold sour cream for lunch. There was half a liter of such sour cream in the refrigerator, fortunately my mother had bought fresh one at the store the day before.

There is no one at home except the three of us, everyone is at work and should come for lunch soon. Together we set about a simple task. Under the guidance of my uncle, my brother and I diligently kneaded the dough. Of course, I tried harder. My brother only helped, he was still very little. We carefully placed our oatmeal cookies on a sheet and put them in the oven. Our uncle went into the living room while it was baking, sort of like watching TV, and left us in the kitchen to guard our work.

We, most likely, didn’t think long and decided to show independence, as I understand it, and prepare sour cream. How did we manage not to disturb the unsuspecting uncle, we apparently acted very carefully. I really wanted to just cook something myself. But by the time the cookies were ready, our uncle had a big surprise!

As he says: “I go out,” he says, “to the kitchen, and there everything around is white and white. And the kitchen table, and the floor, and even... two little men are covered with sour cream from head to toe. And on the table there is only an empty jar of sour cream. And you,” he says, “stand so happy on the chairs, waving your arms, twirling them, dancing, and also singing songs.” I can imagine his stupor :)…

It turned out that we stole sour cream from the refrigerator and, apparently, decided to “make ourselves masks.” Completely covered in cold sour cream. Arms, legs, clothes, face, hair... Yes, it wasn’t easy for my uncle, because there was very little time left before lunch, and he had to have time to wash us and clean everything in the kitchen during this time. He would have gotten it from his parents, which he didn’t notice. And sour cream is fatty! Poor, he's poor
