My deviation from the conditions of the technological map is chopped onion in the amount of 1 medium-sized head for 8-10 cutlets.
Combine minced meat, (onion), bread or bread crumbs, salt, pepper, pour in ice water and stir.
You need to knead the minced meat for quite a long time, since it requires sufficient stickiness.
Then form oblong or round cutlets 1.5-2 cm thick weighing: 50, 75, 100 grams or just weight and size according to the quantity you need and convenient placement in a baking dish.

Semi-finished cutlets can be frozen for later.
Fry the cutlets in a frying pan on both sides
until golden brown or until fully cooked, about 10 minutes if you are preparing a small amount.
Otherwise, place the fried cutlets on a greased baking sheet in a preheated oven and cook at 200 degrees for about 20 minutes.
