How to make school cutlets according to GOST: classic recipe with photos

A special feature of the dish was the large amount of bread in the composition and the absence of a frying process. The detailed recipe will tell you how to make cutlets like in a school canteen from a minimum of ingredients.

Cooking time: 1 hour

Number of servings: 8

Ingredients

Tip: you can use 600 g of ready-made minced pork and beef in a 1:1 ratio, if you have it in the refrigerator.

Step-by-step preparation

Serve the finished products with a vegetable salad or a side dish of boiled potatoes, pasta, sprinkled with oil from a baking sheet. Place the sauce separately.

Step-by-step recipe with photos

Many have noticed that cutlets in canteens, even those located in different cities, always taste very similar if they are prepared according to GOST, i.e. in compliance with the exact recipe for the amount of ingredients and method of preparation. Technological maps were developed for the following cutlets: “Special”, “Moscow”, “Homemade”, etc.

The technological map determined the composition of cutlets, and GOST requirements for raw materials, preparation of minced meat, formation of cutlets, storage conditions, cooking method, appearance of semi-finished products and the finished product. In this recipe I will show “Special” cutlets, according to technological map No. 659, also on “School” cutlets will be added to the site. Both those and others prepared at home are several times tastier than in the dining room!

Prepare the required amount of ingredients according to the list. If you can’t imagine cutlets without onions or herbs, then add them.

To prepare the breading, dry slices of white bread or loaf.

Then grind them into crumbs.

Both white bread crumbs and soaked pulp can be added to the cutlets.

Delicious recipe! Tomatoes calorie content per 100 grams fresh

My deviation from the conditions of the technological map is chopped onion in the amount of 1 medium-sized head for 8-10 cutlets.

Combine minced meat, (onion), bread or bread crumbs, salt, pepper, pour in ice water and stir.

You need to knead the minced meat for quite a long time, since it requires sufficient stickiness.

Then form oblong or round cutlets 1.5-2 cm thick weighing: 50, 75, 100 grams or just weight and size according to the quantity you need and convenient placement in a baking dish.

Bread the cutlet blanks.

Semi-finished cutlets can be frozen for later.

Fry the cutlets in a frying pan on both sides

until golden brown or until fully cooked, about 10 minutes if you are preparing a small amount.

Otherwise, place the fried cutlets on a greased baking sheet in a preheated oven and cook at 200 degrees for about 20 minutes.

Cutlets according to GOST are ready, serve them with side dishes and sauces to taste, and they are also delicious simply with black bread and tea.

If you bought a cutlet in a deli, a canteen, or ordered it in a cafe, how to calculate the calories consumed? How much does a regular standard cutlet weigh?
