I offer a recipe for beef liver cutlets. It is cutlets, not pancakes, that make them plump, and most importantly, according to my recipe, there is no too pronounced liver taste.

The secret is adding a small amount of oat bran and flaxseed flour. It is flaxseed flour that slightly neutralizes the liver taste, which not everyone likes.

Although, to tell the truth, I use flaxseed flour and bran wherever possible. If you look for recipes for liver cutlets, wheat flour is traditionally added to them. Without it, the cutlets will not hold their shape and will fall apart when turned over, but we don’t need white, or even whole grain, flour in the fitness menu. So we replace it with healthy products.

It is better to buy liver not in a supermarket, where they usually sell frozen imported products, but in the market - fresh, by the appearance of which you can determine its quality.

The liver should have a uniform color (veal liver is lighter than beef liver and is preferable), and there should be no spots.

It doesn’t matter which piece of liver we buy - from the edge or from the middle, because we won’t remove the films.

Step-by-step preparation

  1. Step 1:

    Pour boiling water over the liver and remove the film by prying it off with a sharp knife with a thin blade. Then cut it into large pieces, rinse and place in a colander to drain.

  2. Step 2:

    Peel the onion and cut into 4 parts. We peel the garlic.

  3. Step 3:

    Place onion, garlic and liver in a blender bowl. I first put in half the prepared onions and half the liver to make it easier to grind. I put in all the garlic at once. I put the onions and garlic on the bottom so that they grind better.

  4. Step 4:

    Grind all ingredients into a paste. Then I did the same with the remaining onions and liver. You can put all the ingredients in a deep bowl and grind with an immersion blender. It is noticed that in this case the minced meat will be thicker in consistency.

  5. Step 5:

    Pour the minced meat into a deep container.

  6. Step 6:

    Beat in the egg, add mayonnaise, add flour sifted through a small strainer, salt and pepper to taste. I used mayonnaise with a fat content of 67%. Instead, you can put fat sour cream or cream in the minced meat in the same amount. With this addition, the cutlets will turn out more juicy.

  7. Step 7:

    Mix everything thoroughly so that there are no flour lumps. You can let the minced meat sit for a while, about 10 minutes, and then mix it well again. Then there will definitely be no lumps left, since the flour will swell and mix well into the total mass.

  8. Step 8:

    Let's start frying the flight. Heat 2 tablespoons of vegetable oil in a frying pan. Do not pour too much oil so that the cutlets do not turn out greasy. We spread a small amount of minced meat, forming round or oval cakes - mine are oval. I used a wooden spoon to spoon out the same amount of minced meat so that the cutlets came out the same size. Fry on one side over medium heat for 3 minutes.

  9. Step 9:

    Turn over and cook until done for another 2 minutes. Before the next batch, pour a couple of tablespoons of oil again and warm it well. We use all the minced meat.

A delicious recipe for beef liver cutlets in the oven

I love dishes baked in the oven; they seem especially tasty to me. In the oven, dishes turn out tastier, since heat treatment occurs from all sides. In this recipe you can immediately see that homemade sour cream is used, there are no lumps or grains.

This product goes well with mayonnaise and sour cream. My mother cooks chops, layers each layer with onions and garlic, greases with mayonnaise, adds water, and simmers. The chops melt in your mouth.

For cutlets you will need:

  • 600 g beef liver
  • 2 large onions
  • 3 tablespoons oatmeal
  • 1 tablespoon flour
  • Vegetable oil

Gravy:

  • 1 glass of water
  • 200 g sour cream
  • 0.5 teaspoon dried basil
  • salt, pepper to taste

Pour boiling water over 3 tablespoons of oatmeal until the oatmeal is completely covered. Leave for 10-15 minutes. You don't have to cover it with a plate.

You can add oatmeal or wheat porridge, it turns out very tasty and unusual.

In the meantime, let's make minced meat. Wash the liver and cut into pieces, grind in a blender in two steps. Mix the minced meat into the bowl in which we will cook. Add steamed oatmeal.

Peel the onion, cut into cubes and fry in vegetable oil. After frying, let the onions cool and add to the mixture of liver and oatmeal.

Add 1 tablespoon of flour. You don't need a lot of flour.

Mix everything well, you can add one chicken egg, but you can do without it. Next, add salt and ground black pepper. I really like salty cutlets, then you can eat them with fresh vegetables. Moreover, do not add salt to the vegetables.

Pour vegetable oil into a frying pan, heat it up, and put the liverworts in a tablespoon. They should not be pressed tightly against each other, but at a distance.

Fry on each side for 1-2 minutes over medium heat. If the fire is made strong, they will burn, but on low they will not fry, but will spread throughout the pan.

We place the finished products on a baking sheet, we will bake the liver cutlets in the oven. Lay out in 2-3 layers. Let's prepare the gravy. Place sour cream in a bowl, I use homemade one. Add water, salt, pepper, basil. I stir and pour into the pan.

We distribute the gravy not at one point, but evenly over the entire surface. Add bay leaves and peppercorns if desired.

Cover the top with foil and place in the oven for 30-35 minutes. Preheat the oven to 200 degrees.

With semolina, pancakes turn out more tender and fluffy, but oatmeal is a healthier and more dietary product. Although it contains the same calories. 1. Grind the liver in a meat grinder. It does not need to be cleared of films, because they will be finely chopped in a meat grinder. Simply wash and let the water drain. I put it in a colander for a couple of minutes.

2. Grind the carrots. You can grate it on a fine grater, but using a meat grinder is much easier and faster. So if you are saving time, then don’t bother with a grater.

3. Finely chop the onion. I don't recommend grinding it because you will get onion juice, not onion. And the liver already provides enough fluid. We don't need extra water.

4. As a matter of fact, the most important work has already been completed. Now all we have to do is mix all the ingredients sequentially. Place the ground liver and carrots and finely chopped onion in a bowl or bowl.

5. Add one raw egg.

6. Put cereal (semolina or ground oatmeal), salt in a bowl, grind a little pepper in a grinder or just sprinkle it from a bag. I try not to use this kind of pepper in bags. It doesn't even come close to the flavor of freshly ground.

  1. Wash the liver, remove films and veins. If desired, you can soak it in cold water or milk for an hour or two to remove the unpleasant animal odor, which is absent only in the freshest offal or from a young animal. Cut into pieces.
  2. Peel the onion and cut into four parts.
  3. Grind the liver and onion with a food processor or meat grinder into a single mass. Add salt. Add a small amount of diced cheese to the minced meat. With it, the cutlets acquire a delicious creamy aroma.
  4. Place the minced liver into silicone molds greased with vegetable oil and transfer them to a tray for steaming. Place the tray with the molds in the kitchen appliances and steam for 30-40 minutes.

Ready-made steamed cutlets are served warm - with any side dish and your favorite sauce. For variety, you can add chopped tomato, bell pepper, chopped fresh herbs, and olives to minced beef liver instead of cheese. And every time an original liver dish will exude aromas on your table, which will never get boring.
