If it is hard, then fill it with hot water and leave for 10 minutes so that it absorbs moisture and acquires a soft consistency. Then add it to the curd mass and mix the products.
5. Beat the whites with a small pinch of salt with a mixer into a strong and tight white foam.
6. Fold the whipped whites into the curd dough.
7. Gently fold the whites into the mixture. Do this with slow movements in one direction. It is necessary that the proteins retain air and airiness.
8. Take a glass or any other convenient form and cover it with baking parchment, which you first moisten in water. It will be good to line the paper according to the shape of the container. Then pour the curd mass into the mold and smooth it out. Place the bowl in a colander over a pan of water. At the same time, make sure that the water does not come into contact with the sieve.
