We think it’s no secret that every nation living on planet Earth differs from others not only in language or appearance, but also in its distinctive culture, culinary traditions and preferences. However, most people around the world will not mind enjoying the sweet and delicious confectionery called cakes. In addition, each nation will have several exclusive recipes for popularly loved confectionery and sweet treats.

Cakes were not initially identified as a separate type of confectionery product. It was believed that cakes were just a small cake. However, over time, humanity has appreciated the new type of confectionery products that were invented by culinary masters back in the Middle Ages. Currently, in the world culinary tradition there are a sufficient number of types of cakes. We want to talk about one of these types today.

Potato cake is one of the ten most popular and widespread confectionery products in our latitudes. In addition, potato cake is considered an easily accessible food product that can be prepared at home without much difficulty. Therefore, it is not at all surprising that many domestic housewives can easily prepare potato cake themselves and please their loved ones with a delicious delicacy.

Recipes at home

Potato cake (the calorie content of the dessert can be significantly reduced by replacing high-calorie butter and milk with less nutritious products) can be prepared independently at home, using both traditional recipes and improved low-calorie recipes.

Recipe according to GOST

Soviet recipe for Potato cake, created according to a recipe approved by GOST.

Required ingredients:

  • chicken eggs – 4 pcs.;
  • granulated sugar – 100 g;
  • flour – 80 g;
  • potato starch – 20 g;
  • butter – 130 g;
  • powdered sugar – 70 g;
  • condensed milk – 60 g;
  • rum – 1 tsp;
  • cognac – 1 tsp;
  • cocoa powder – 1 tsp.

Cooking method:

  1. Break the eggs into a bowl, add granulated sugar to them, and then beat the resulting mixture with a mixer until white foam forms.
  2. Flour and starch must be sifted through a sieve, and then carefully combined with the egg mixture.
  3. The resulting dough needs to be mixed well, and then laid out and rolled out on parchment paper placed on a baking sheet. The resulting circle must be placed in the oven and cooked at a temperature of +180-200 degrees Celsius for about 12-15 minutes.
  4. After the specified time, the resulting sponge cake must be removed from the oven, cooled, and then broken into pieces, put in a blender and grind to fine crumbs.
  5. Place the melted butter in a deep bowl, add powdered sugar to it, and then beat the indicated ingredients with a mixer until the consistency thickens (about 5-6 minutes). Without ceasing to beat, gently pour condensed milk into the resulting cream in a thin stream. After adding the last ingredient, the mixture should be beaten for about 5 minutes.
  6. From the resulting cream you need to set aside 1 tsp. (reserving for decoration), and the rest of the mixture must be combined with the crushed biscuit and mixed carefully. The last thing to do is pour alcohol into the resulting dough, and then mix the consistency well again.
  7. From the finished mixture, with your hands dipped in cold water, you need to mold small oval or round balls, and then roll each piece one by one in a mixture of cocoa and powdered sugar.
  8. In the resulting cakes, you need to make 2-3 indentations with a skewer or toothpick and fill them with the remaining creamy mass.

Composition of potato cake

It is noteworthy that in the food industry, potato cake is called rusk cake, i.e. a confectionery product made from crushed bread. The official name of the confectionery product accurately reflects the composition of the potato cake. As a rule, crackers are used to make potato cakes, which are made from different types of bread. Often it is confectionery or ready-made crackers that are included in the potato cake.

In addition to crackers, the potato cake contains granulated sugar, butter, cocoa powder, vanilla, and an alcoholic component. As a rule, sweet and low-alcohol liqueurs are used to make potato cake. It is noteworthy that the potato cake does not need to be heat treated and baked in the oven until fully cooked. This is the main feature of the confectionery product, for the preparation of which you just need to grind the crackers, mix the resulting mass with sugar, egg and butter.

Often, cocoa powder or boiled condensed milk, nuts, sunflower seeds, and vanilla are added to potato cakes. The resulting mass is thoroughly mixed, then given a distinctive round or slightly elongated shape, which distinguishes the potato cake from other confectionery products, and the pieces are placed in the refrigerator to complete preparation. After some time, the potato cake is decorated with cream or confectionery sprinkles and served.

The calorie content of potato cake is at a fairly high level. This is due, first of all, to the chemical composition and set of initial ingredients that are used to prepare the confectionery product. The average calorie content of a potato cake is 310 kcal, which is per 100 grams of confectionery product. In addition to a fairly high level of calorie content, potato cake contains a large amount of sugar, and, consequently, carbohydrates. Therefore, people suffering from obesity or diabetes should avoid uncontrolled consumption of potato cake.

The benefits and harms of cake

Potato cake (the calorie content of the product depends on the components included in the composition) is rich in vitamins and minerals necessary for the normal condition and development of the body.

The butter contained in the cake is rich in fat-soluble vitamins and cholesterol. Milk contains protein, calcium, phosphorus and vitamins A, E and C. Cocoa is the leader among products in terms of potassium and mineral content.

The high-energy cake fills the body with energy, stimulates the production of the joy hormone serotonin, and the beautiful appearance of Potatoes and the aroma of cocoa relieve stress and promote appetite. Dessert is especially useful for people suffering from nutritional deficiency and related diseases (bulimia and anorexia).

Despite the large amount of useful substances, the cake contains a lot of sugar and cholesterol, which makes the product undesirable for people suffering from:

  • diabetes mellitus;
  • atherosclerosis;
  • diseases of the liver, pancreas, biliary tract and stomach.

You can try it, but you shouldn’t expect an unforgettable taste! (photo in old and new packaging + composition)

I have developed a love for desserts or cakes with the “Potato” flavor since childhood, and I think that many people also like this taste. Recently, and even in recent years, I have come across completely different “Potatoes” (dry, dense, loose, with fruit and berry filling, etc.), i.e. At the moment you can find completely different versions of your favorite dessert.

I like to combine sweets like this with a cup of unsweetened tea or coffee/chicory (your choice).

A pack contains 250 grams of sweets, they are packaged in transparent packaging, through which the individual wrapper is visible. The production date is also indicated on the packaging. If. You are interested in the number of units, then there are exactly 20 candies, each of which weighs on average 12-13 grams.

This is what an individual wrapper looks like, which is not at all difficult to open along the welding seams. The composition is not indicated on the candy wrapper, but there is information about the manufacturer and a description of the candy. The composition is placed on the packaging bag or box, if you take it by weight.

The candy may not seem the most appetizing visually, because... the body simply gives away that it is made of confectionery icing and not chocolate. However, if you read the ingredients before purchasing, this will not be news to you. Sometimes it happens that the confectionery glaze tastes just fine. In this case, it’s really not bad (for some reason I expected it to be even worse).

Inside, it turned out that the case is not so “thick” and begins to slowly melt in your hands. It doesn’t taste very much like “plasticine”, but it doesn’t taste like “full” chocolate either. In combination with the filling, the glaze generally remains a secondary matter. There is a lot of filling, and it is not liquid, but also not juicy, as in the cakes of the same name. You can clearly feel the crumbs of sugar cookies (why exactly sugar cookies? Firstly, this is stated by the manufacturer, and secondly, you can feel the inherent softness of this type of cookie). The total mass of the filling is also made on the basis of cookies and cocoa powder with “condensed milk”.

How to cook potatoes for diabetes

Have you been struggling with DIABETES for many years without success?

Head of the Institute: “You will be amazed at how easy it is to cure diabetes by taking it every day.

Many patients ask nutritionists the same question: “Can I eat potatoes if I have diabetes?” Potatoes are a very necessary product; they contain vitamins and beneficial microelements. But nutritionists are of the opinion that diabetics can include no more than 200-250 grams of this product in the list of foods they eat per day. Let's find out why?

In what form to use

Carbohydrates are divided into simple ones, which are absorbed quickly by the body, and complex carbohydrates, which are absorbed slowly or not at all. The fastest carbohydrate is starch; it is found in large quantities in potato tubers. Excessive consumption of starch is not advisable not only for type 1 or type 2 diabetics, but also for healthy people, because it can cause the deposition of “strategic” reserves in the body.

Our readers successfully use DiabeNot to treat joints. Seeing how popular this product is, we decided to bring it to your attention. Read more here...

It is important to know: 100 grams of boiled potatoes in their jackets contain 82 kcal, 1 bread unit, glycemic index is 65.

For diabetes, nutritionists recommend eating baked and boiled potatoes. You can cook potatoes in their skins, since most of the necessary substances are located under the skin. And although most of them are destroyed during cooking, some of them still remain. It is worth noting: the glycemic index of boiled jacket potatoes is 65, which classifies them as dishes with an average GI value, in contrast to peeled boiled tubers, whose glucose index is 70 - a product with a high GI.

It is important to know: 100 grams of fried potatoes contain 192 kcal, 2 bread units, glycemic index is 95.

Baked potatoes can also be consumed by both type 1 and type 2 diabetics. When baking, it is also recommended to leave the tubers with their skins on. The calorie content of one potato is 114 kcal. This is not much, but you should always remember that the starch contained in this product is processed quickly, due to which the feeling of hunger will soon return again.

It is advisable not to consume mashed potatoes at all; this dish can increase glycemia, like Coca-Cola or a cake.

Important Tips

It must be remembered that foods prohibited for diabetes are:

  • mashed potatoes;
  • french fries;
  • fried potatoes;
  • chips.

Nutritionists believe that soaking potatoes before cooking will help minimize their starch content and make them easier to digest. The body will not release hormones that can increase blood sugar. It is better to fill the peeled tubers with cold water and leave for 2 hours. The starch remains in the water and the potatoes can be safely used for food.

For diabetes, nutritionists recommend cooking potatoes in a slow cooker or oven. A baked potato contains 150 calories and can be eaten with roasted vegetables or a salad. But of course, it’s healthier to eat boiled jacket potatoes, which contain 82 calories per 100 grams.

When buying potatoes, it is better to pay attention to the unsightly tubers of the first harvests. There is no need to pay attention to the unpresentable appearance - they contain large amounts of zinc, magnesium, potassium, and iron.

Results

We can summarize whether a diabetic can eat potatoes:

  • You can only consume 200-250 grams;
  • Before cooking, you should soak for 2 hours;
  • It is better to use the product in its uniform;
  • before meals, administer the required dose of insulin, having previously calculated the XE (for type 1 diabetes);
  • control glycemic levels.

All recommendations are very useful and of great importance for diabetics. But the diet for both type 1 and type 2 diseases should be selected individually together with a specialist - nutritionist, endocrinologist. After all, the doctor sees the patient’s condition and laboratory data. Using his knowledge, the doctor will prescribe healthy foods and build a diet so that patients with diabetes of any type can lead a normal rhythm of life and not deprive themselves of the joys of the world around them. Patients should also listen to their body and take into account its desires, but in moderation!

Recipe for potato biscuit cake according to GOST USSR

Options for products made with cookie crumbs are quick and convenient. But they are still different from the recipes that we ate in our distant childhood. In the confectionery shops of the Soviet period, classic cakes were prepared from sponge crumbs left over from cake production (a waste-free process).

And for decoration, a delicious cream was prepared from butter, sugar and milk, with the addition of cognac. According to the recipe approved by GOST, all cakes were identical in composition.

Required Products:

  • 120 g flour;
  • 120 g sugar;
  • 4 medium eggs;
  • 110 g sugar;
  • 125 g (half a pack) butter;
  • 1/2 egg;
  • 75 g milk;
  • 1.5 tsp. cognac;
  • 30 g powdered sugar;
  • 10 g cocoa powder;

How we will cook:

We don't have biscuit crumbs. We'll have to bake a sponge cake to get it.

Replace two tablespoons of flour with starch (for fluffiness). The total weight remains the same. Mix and sift. Break the eggs and place them in a mixer bowl. Beat together with sugar until fluffy white mass.

Add flour to the egg mixture in parts and mix carefully so that it does not settle.

Experienced cooks advise mixing in one direction - from bottom to top. To avoid knocking down air bubbles in the dough.

Pour the biscuit dough onto a baking sheet lined with special paper and level it out. Bake in an oven preheated to 180 degrees. The product bakes quickly. It will take approximately 15-20 minutes.

Remove the paper and leave to cool. Grind the dried biscuit into crumbs. This can be done by hand.

Now prepare the Charlotte cream. To do this, add sugar to the milk. We do not take all the sugar (we leave 10% of the specified norm). Place the saucepan on the stove and bring to a boil. We're filming. Beat the egg with the remaining sugar. Pour the milk into the egg mixture in a thin stream. At the same time, do not forget to mix it.

Calorie content of cakes

A cake is a small piece confectionery product of various shapes, made from dough and various types of fillings. Often the cakes have an original artistic design. “Pirozhnoye” is the Russian name for a class of confectionery products, according to one of the culinary critics, who are not united by any common principle. However, there is still a common feature of all cakes, regardless of the composition, method of preparation, or filling. Cakes, as a rule, are always small in size, which is its main insidiousness. Since the cakes are small in size, the calorie content of the cakes is quite high.
