Whisk the egg whites, add sugar substitute, baking powder, espresso and knead the dough. Place the dough on flat baking sheets and bake at 180 degrees for 20 minutes. Mix low-fat cottage cheese with banana pieces and grind into cream in a blender. Cool the cakes, cut them in half, layer them with cream, and place some of the cream on top. Leave in the refrigerator for 2 hours, then cut into portions with a sharp knife and decorate individual cakes with grated chocolate, if desired.

10 pieces of ready-made tartlets, 1 packet of fruit jelly for diabetics, 200 g peaches, 200 g raspberries, 300 g apples.
