The calorie content of zucchini is only 22-24 calories per 100 grams and the best way to preserve its dietary properties is to cook it in the oven.

The casserole is widely known; it is prepared in almost every corner of the world, but it is called differently. For example, the Italians have lasagne, the French have gratin, and the British have pudding. All these dishes are united by a similar cooking technology.
By the way, there are a lot of different types of casseroles, which can be divided into sweet (dessert) and non-sweet: meat, vegetable, fish, cheese, mushroom, cottage cheese, etc. Most often, pasta or cottage cheese are used in their preparation, but this is not necessary. Most often when preparing casseroles:
- all products are processed and placed in a mold;
- pour the egg-milk mixture on top;
- Place in the oven until fully cooked.
So, let's prepare a casserole with minced meat. And to make cooking easier, I diluted the text with photographs of cooking.

Let's start preparing the first casserole with minced meat, cheese and tomatoes. The following seasonings are well suited for this dish: Italian herbs, oregano, basil, thyme, coriander, suneli hops.
Please note that these vegetables have a feature that needs to be taken into account when preparing all our dishes. This vegetable consists of 90 percent water. Usually liquid is added to casseroles, but we, on the contrary, will carefully remove excess juice from zucchini, otherwise our dishes will not hold their shape. Therefore, we pay attention to this point.
To prepare we will need:
- Zucchini – 1 kg.
- Minced meat – 400 g.
- Onions – 2 pcs.
- Chicken eggs – 2 pcs.
- Tomatoes – 2-3 pcs.
- Garlic – 2-3 cloves
- Hard cheese – 170 g.
- Sour cream – 200 g.
- Salt, spices - to taste
- Parsley - a small bunch
- Vegetable oil - for frying
1. Wash the zucchini and remove the tail from the stalk. If you have a young vegetable, then you do not need to peel the skin. Grate it on a coarse grater, pour it into a bowl, sprinkle with salt and let stand for 15 minutes to release excess liquid.
2. Cut the onion into cubes and fry in a frying pan greased with vegetable oil for two minutes until transparent.

Cooking meat casserole from zucchini with potatoes in the oven
This recipe uses simple ingredients to create a delicious dish! It is suitable for both festive and everyday tables. Even those who don’t eat zucchini will eat them in this dish with pleasure, because they will be saturated with the taste of the minced meat. Prepare this casserole and you will see for yourself.
To prepare we will need:
- Zucchini – 2 pcs.
- Potatoes – 1 kg.
- Minced meat – 500 g.
- Eggs – 2 pcs.
- Sour cream – 200 g.
- Salt, pepper - to taste
- Vegetable oil
1. Grind the onion on a fine grater. Prepare the minced meat for frying: knead with a fork until it becomes homogeneous, add salt, pepper, and onion. Place the mixture in a frying pan with vegetable oil. We bring it to half readiness.
2. Three zucchini on a coarse grater and pour into minced meat. Simmer until the liquid evaporates.
3. Beat sour cream with eggs and add salt and pepper.
4. Cut the potatoes into slices.
5. Form the casserole: put the potatoes in the first layer in a mold greased with vegetable oil. Then meat with zucchini and cover with a layer of potatoes.
Fill everything with sour cream and egg mixture. Sprinkle plenty of hard cheese on top.
4. Place the casserole in an oven preheated to 200 degrees for 40 minutes.

Cooking meat casserole from zucchini and without eggs
I would like to offer you a casserole that will replace the side dish on your table. This recipe is different in that we will not use eggs and there will be only two layers - meat and vegetable.
For preparation we will need:
- Zucchini – 2 pcs.
- Minced meat – 600-700 g.
- Tomatoes – 3 pcs.
- Onions – 1 pc.
- Carrots – 1 pc.
- Hard cheese – 100 g.
- Sour cream (15-20% fat content) – 100 g.
- Garlic – 4 cloves
- Greens – dill, parsley, cilantro
- Salt, pepper - to taste
- Vegetable oil – 1 tbsp. spoon
1. Wash and clean all vegetables. Finely chop the onion, garlic and herbs, grate the carrots on a fine grater.
2. Tomatoes should be sliced, and zucchini – into 3-4 mm circles.
5. Place vegetables beautifully on top of the minced meat.
6. Place in the oven, preheated to 200 degrees for 20 minutes.
7. Meanwhile, prepare the sauce: garlic, passed through a press, add to sour cream.
8. After 20 minutes, take out the dish and fill it with sour cream sauce, sprinkle with hard cheese.
9. Place in the oven for another 15-20 minutes. Let the finished dish sit for half an hour. You can top the casserole with homemade mayonnaise.
As the casserole cools, it becomes denser and holds its shape, so this dish is best served slightly cooled, warm.
