    In barley flour you will find all the B vitamins, as well as some of the most essential microelements: potassium, iron, phosphorus and magnesium. Due to the gas-retaining properties of barley dough, products made from it must be present in the diet of people suffering from digestive tract problems. This dietary pastry made from cottage cheese can easily replace the usual bread or become an excellent dessert when adding ginger syrup.

    Let's prepare:

    • 200 g barley flour,
    • 50 grams of wheat flour,

    1. Grate the apples on a coarse grater, mix with raisins and cinnamon.

    2. Roll out the defrosted dough into a rectangle. Divide it lengthwise into 3 parts (not cut all the way through), and cut the two side parts into a herringbone pattern.

    Apple pie with kefir

    Apple pie is also prepared very quickly using kefir. But the filling can be anything.

    • 2 eggs
    • 300 ml kefir
    • Apples – 1 kg
    • Sugar – 170 g
    • Vegetable oil - 3 tbsp.
    • Baking powder - 1 tsp.

    1. Beat eggs and sugar with a mixer until the sugar dissolves.

    3. Add enough flour to make the dough as thick as condensed milk. (It is better to use less flour than to have a dough that is too thick. A thick dough will not bake all the way through and will not be fluffy). Beat with a mixer too.
    4. Grease the mold, sprinkle lightly with flour, pour out half the dough. Place the peeled, chopped apples and pour in the remaining dough.
    5. Bake for 45 minutes at a temperature of 170-180 degrees. Check the readiness of the pie with a skewer.

    Let's prepare a dish without eggs. We will need 450 ml of kefir, 320 g of oatmeal, a little soda, 400 g of cabbage and 1 carrot.

    Preparation: finely chop the cabbage, grate the carrots on a coarse grater. Place the vegetables in a frying pan, add some salt, add a little water, and simmer until tender.

    Put soda in kefir, add flour, add salt, mix well. Grease the mold with oil and sprinkle with flour or semolina. Pour half the dough, add cabbage. Pour in the rest of the dough. Bake as in the previous recipe.

    Sour cream pie

    A pourable pie with herbs, eggs and cheese is very tasty and aromatic. Sour cream, unlike kefir, makes the dough more porous, airy and soft. To make the pie you need:

    • Break 2 eggs into a bowl, add a pinch of salt and a little paprika and black pepper;
    • add 300 g of fat sour cream to the eggs, stir well with a fork or whisk;
    • sift 1 tbsp. wheat flour, add 1 tsp. baking powder or soda;
    • pour the flour into the sour cream and eggs, stir so that there are no lumps.

    While the dough is “resting” and gluten is forming in it, you need to prepare the filling:

    • wash a bunch of green onions. Together (or instead) you can take parsley, dill, sorrel, spinach, and other greens. Dry on a paper towel and finely chop. Lightly salt and pepper, knead with your hands to make the filling more juicy and soft;
    • hard boil 2 eggs, cool, peel, chop finely, add to greens;
    • grate 100 g of hard cheese on a coarse grater, mix with the rest of the filling ingredients.

    Preheat the oven to 1800C. Line the pan with parchment paper or grease it with butter. Place the filling and pour a layer of liquid, well-mixed dough onto it. Place in the oven for 30-35 minutes.
