In Asian countries, housewives make their own soy cheese. Recipes are passed down from generation to generation. However, in order to prepare tofu cheese at home, it is necessary to take into account all the features of the technological process.

The main ingredient is soybean grains (legumes), which are boiled and crushed to extract milk. Then the product is cleaned of cake and excess impurities, and a coagulant is added for coagulation. The liquid is decanted or squeezed out under pressure and laid out in forms.

Varieties of cheese consistency

There are three types of consistency:

  • soft (silk) – maximum moisture, consistency of thick cream or pudding. Suitable for serving with appetizers;

To obtain a solid consistency, you need to transfer the mass into gauze and place under slight pressure. Exposure time – 2-3 hours. For a variety of taste sensations, it is recommended to add spices or herbs to the mixture.

Dry consistency is achieved by keeping under pressure for about 4-6 hours.

  • Natto. A fermented soy product that has great health benefits and may reduce high blood pressure. It is an excellent source of protein, fiber, vitamins and minerals. Contains an enzyme that produces vitamin K2.
  • Tempe. Also made from fermented soybeans. Whole soybeans are used in production. Because of this, tempeh can lower cholesterol, strengthen bones, reduce menopause symptoms, and repair muscles.
