Diet soup with oatmeal (poultry broth)

Food for weight loss

To lose weight, nutritionists recommend cutting out carbohydrates and eating as much protein as possible. Of course, for a while you should forget about sweet, fatty, smoked and overly salty foods. In general, you should consume as little salt as possible, because it retains moisture in the body.

You should drink at least 2-3 liters of water per day. It is important not to forget about the first courses. Of course, you can’t eat the usual borscht and rich soups on a diet, but it’s quite possible to do something light.

To get a dietary dish, you do not need to use bones, fatty meat, potatoes and other ingredients that are harmful to losing weight for cooking soups. Oatmeal soup, which is very beneficial for the body, can be an excellent lunch.

Oatmeal is found in almost every home, and its benefits for the body are invaluable. Cereals contain a lot of fiber, which improves intestinal function. Other beneficial microelements in oatmeal help the body function properly.

Oatmeal soup contains very few calories and is great for those who want to lose weight. It is best to eat this dish at lunch, because oatmeal contains carbohydrates that must be used by the body before you fall asleep.

Option 1: Hercules soup with oatmeal - classic recipe

It’s easy to cook up a wonderful soup from a set of pork goulash and the most modest vegetables. Cut off the lard, if any, and calculate the mass of pulp without it. After rendering the fat from the cracklings, sauté the vegetables on it; the soup will become more tender, but somewhat higher in calories.

Ingredients:

  • slice of pork - three hundred grams;
  • five to six tablespoons of large oatmeal;
  • spoon of vegetable oil;
  • a large onion and a carrot of the same mass;
  • salt, coarse;
  • three hundred grams of potatoes;

Step-by-step recipe for oatmeal soup

Step 1:

Soups on Hercules do not need rich meat and bone broths. Choose regular pork tenderloin, leaving or removing excess fat as you wish. Cut the pork into cubes and wash, place in a slightly incomplete three-liter pan with boiling water.

Step 2:

Adjust the heat under the broth to medium, remove the foam when it boils. Cook the broth for forty minutes to an hour, depending on the toughness of the pork. In heated oil, sauté the onion, cut into checkers, and grated carrots. Peel the potatoes and cut them into cubes.

Step 3:

Remove the meat from the broth, strain the liquid and reheat to a boil. Salt the broth and dip the potatoes into it, skimming off the foam, and cook over low heat for ten minutes. Place the sauté into the pan, wash the frying pan and dry it, and put it on heat again.

Step 4:

We don’t fry the flakes, but heat them strongly in a dry frying pan. As soon as an amber crust begins to appear on the edges of the first pieces, pour the flakes into the soup and add the pork along with it. Cook the soup for two minutes at the lowest simmer, stirring with a long spoon. Be sure to place parsley leaves in portioned bowls for the soup, and offer onion feathers separately.

Recipe 3: oatmeal soup with vegetables and mushrooms

We suggest preparing oatmeal soup for lunch. This soup is quite nutritious, filling and flavorful. The main set of vegetables is potatoes/carrots/onions, we suggest adding them without fail, but as for champignons, it’s a matter of taste. You can use any mushrooms, or you can do without them at all. You can also make oatmeal soup with turkey or chicken broth, but we offer a leaner and lighter option. At the end of cooking, a generous handful of chopped herbs is certainly added to the soup. You need to take your favorite oatmeal. So, we suggest going to the kitchen and cooking an unusual soup for lunch.

  • Oatmeal 2 tbsp.
  • Water 1.5 l
  • Potatoes 2 pcs
  • Carrot 1 piece
  • Onion 1 piece
  • Champignons 3 pcs
  • Butter 30 g
  • Salt 0.5 tsp
  • Ground black pepper 0.3 tsp.
  • Parsley (greens) to taste
  • Vegetable oil 1 tbsp

Prepare the entire vegetable set - peel young potatoes with a stiff brush, do the same with carrots, wash mushrooms and young onions in cool water. If desired, remove the top layer from the champignon caps. Dry the vegetables.

Take a frying pan, heat it on the stove and set the burner to medium heat. Literally pour in a spoonful of oil. Chop the prepared vegetable set - choose the cutting method that is more preferable for yourself.

Fry the vegetables for five to six minutes until the first golden brown crust appears. You don't need to fry it too much, but don't simmer it either. At the same time, boil approximately 1.5-1.6 liters of clean water. It is better to cook such light soups for one, maximum two times.

Place the browned vegetables in hot water and cook for about 8 minutes. In addition to this vegetable set, you can always use ingredients that are on hand. So, for example, you can add young green peas or corn to oatmeal soup. It will also be delicious with green beans or broccoli, in general, it all depends on your preferences for vegetables.

At the end of cooking, pour oatmeal into the pan. Stir and simmer the soup for just two minutes. But here also look at your oatmeal, if it is flakes - 2-3 minutes is enough, if it is whole grain oatmeal - you need to cook it according to the recommendations on the package. Add salt and pepper to taste, you can also add a pinch of paprika or your favorite spices.

At the very end, add a small piece of butter to the soup. Stir and take a sample, if necessary, adjust the taste to the desired level.

Chop your favorite fresh herbs, pour a generous handful into the pan, and you can immediately pour the soup into bowls.

Oatmeal soup is ready, bon appetit!

Adviсe

To get the perfect oatmeal soup, use the following recommendations:

  1. Place the oatmeal in cold water so that the cereal cooks gradually. Some recipes recommend adding it at the end, then after that cook the soup for no longer than 5 minutes;
  2. to get a rich, aromatic dish, add as many spices, herbs and favorite seasonings as possible;
  3. Parsley root will help add a special piquancy to the dish. It should be washed, crushed, and then added to the soup somewhere in the middle of cooking;
  4. It’s better to cook this soup at once, but if you don’t have much time, pour the dish into plastic containers and freeze. Then you can simply take out one portion, defrost and heat it in the microwave;
  5. The soup can be eaten with rye crackers, but their calorie content is very high. In order not to gain weight, it is better to replace them with bread made from rye flour. It will be no less tasty, but much more healthy;
  6. Serve oatmeal soup with chopped herbs. This way the dish will not only be healthy and tasty, but also beautiful!

Option 3: Diet oatmeal oatmeal soup

The coarsest flakes are used for cooking soups, with rare exceptions specified in the recipe. Not only is this product much healthier, it also cooks better, in the sense that you can feel the flakes in the soup if you don’t forcefully grind it. Any fast-cooking product would turn into jelly during the same cooking time.

Choose a pack of Hercules, oh, these cereals are the most suitable for soups. If you have a choice between packaged and loose flakes, then you should choose the latter. The point, of course, is not that it is convenient; the flakes in such a package are coarser than packaged Hercules, and therefore the soup will only turn out better with them.

Ingredients:

  • three hundred and fifty grams of potatoes;
  • half an onion and a carrot;
  • a spoonful of chopped fresh parsley;
  • two spoons of oil;
  • salt and bay leaf;
  • two spoons of oatmeal flakes.

How to cook

Step 1:

Directly from the cutting board, place the peeled and washed vegetables into the saucepan. We cut the potatoes into one and a half or two centimeter cubes, cut the carrots about half as small, and generally chop the onion with a heavy knife, having first dissolved it into rings.

Step 2:

Turn on the burner under the pan to medium-high heat, pour in water at the rate of one and a half liters. After the water boils, add oil and add a little salt to the broth.

Step 3:

Reduce the temperature to as low as possible, leave the vegetables to cook for forty minutes, covering the pan tightly. Some of the water will inevitably boil away, add the required amount to the previous level and lightly crush the vegetables with a wire masher.

Step 4:

When the broth boils, pour the flakes into the pan, stir and add another pinch of salt. Dip a small dry bay leaf into the broth. Cook for no longer than five minutes and turn off the stove. After the dish has steeped for another ten minutes under the high lid, pour the soup into serving bowls and sprinkle with parsley.

Chicken soup with oatmeal is a light, flavorful and healthy soup. It is very easy to prepare such a soup; there is no need to fry it, although you can do it by frying onions and carrots in oil, but if the chicken is homemade, I still prefer to exclude frying from the cooking process.

So, take water, chicken, potatoes, salt, onions, oatmeal, parsley, ground black pepper and bay leaf. Cut the chicken into pieces, put it in a saucepan, add water and let it cook. When the chicken meat is cooked, remove the chicken pieces from the broth and add the potatoes (cubes) into it.

Remove the chicken meat from the bones and place it back into the pan. When the potatoes are almost, but not completely, cooked, add salt to the soup and add half the peeled onion.

Boil the soup for another 7 minutes, remove the onion, and add oatmeal (not instant cooking) into the soup.

Cook the soup for about 10 minutes. Add herbs, bay leaf and black pepper to the finished soup. Chicken oatmeal soup is almost ready, let it boil and turn off the stove. After about 10 minutes, chicken soup with oatmeal can be poured into plates;)

When dieting, it is important not to forget about your health. First courses must be consumed

Egg soup

Eggs are an excellent source of easily digestible protein, amino acids and vitamins. The menu with this healthy product is highly nutritious. A dish with oatmeal and eggs can be consumed every day, the body will only say “thank you.” It is also noteworthy that there is no oil in it.

Ingredients

  • 2 raw eggs;
  • oatmeal - a quarter cup;
  • greens – parsley, dill, basil;
  • parsley root;
  • small onion;
  • bay leaf, salt;
  • sweet pepper – 1 piece;
  • potatoes - 2 large or 4 small.

Cooking method

  1. Pour washed oatmeal with water.
  2. Pour 3 liters of water into a saucepan, bring to a boil, add diced potatoes, parsley root, onion and cook until the potatoes are ready.
  3. Wash the greens and cut them.
  4. Core the bell pepper and cut into cubes.
  5. When the potatoes are ready, add oatmeal, pepper, and bring to a boil. Boil for 20 minutes.
  6. Break the eggs into a separate container and beat with a fork.
  7. Slowly pour the egg mixture into the boiling soup, stirring so that the egg flakes are evenly distributed and do not form lumps.
  8. Throw in the greens and salt. Mash the potatoes slightly.
  9. Boil. Disable.

Option 4: Vegetable oatmeal soup

It seems that minimal vegetables have been added, but the soup is completely different!
Onions of the specified variety can be safely replaced with white ones; this will not affect the taste at all, and the color will hardly change. You can buy fresh peas for a very limited time, frozen ones are quite suitable and you don’t even need to thaw them. Ingredients:

  • a couple of medium-sized potatoes;
  • one hundred grams of peas, green;
  • juicy sweet pepper;
  • half a spoon of turmeric;
  • small colored onion;
  • a handful of greens;
  • sweet carrot;
  • oil;
  • thirty grams of oatmeal;
  • salt, bay leaf and fine pepper;
  • two hundred gram zucchini (or the pulp of a large one).

Step by step recipe

Step 1:

The soup is prepared quickly; we put the vegetables into it, as they say, with a knife. Therefore, set the water, in the amount of two liters, to boil ahead of time. We peel the zucchini, regardless of the tenderness of the skin, and cut it into cubes up to two centimeters in size. We cut the potatoes exactly the same way, but the carrots will have to be chopped twice as fine.

Step 2:

Turn on the second burner to maximum and place a steel frying pan on it. Heat the oil hotter, sauté the carrots on it and add equally finely chopped onions to it. While the vegetables are fried, remove the seeds from the pepper and wash it, cut it into centimeter squares, put it in a frying pan and simmer for up to five minutes.

Step 3:

Don’t miss the moment when the water boils in the pan, immediately lower the potatoes into it. Boil it until half cooked and add the zucchini, add green peas. Boil the potatoes until the potatoes are ready, then add the fried potatoes to the soup and add salt, pepper and bay leaves.

Step 4:

Pour oatmeal and turmeric into the pan, stir, lower the heat to a very low boil. Cook for five minutes, sprinkle with herbs and leave for a while, waiting until the soup is saturated with aromas.
