Recipe 4: Liver cutlets with pork and oatmeal

This is just a great recipe! Quick to prepare, simple and healthy ingredients. It’s not a shame to serve such a dish to guests, and it doesn’t look like pancakes, but real cutlets.

Ingredients For cutlets: • beef liver – 0.4 kg; • fatty pork (brisket) – 100 gr.; • oatmeal – 50 gr.; • milk – 50 ml; • soda – ½ teaspoon. spoons; • garlic – 1 clove; • salt, ground black pepper.

For the sauce: • sour cream (15-20%) – 150 ml; • large onion – 1 pc.; • water; • salt.

Cooking method

Pour milk at room temperature over oatmeal and let sit for 20 minutes. Grind the pork and liver in a blender or grind through a meat grinder. Add finely chopped garlic cloves and swollen oatmeal to the minced meat. Salt, pepper, add soda and mix thoroughly until a homogeneous consistency is obtained.

Lightly fry in vegetable oil until golden brown (put a heaping tablespoon into the pan). On each side – 3 minutes, no more.

Chop the onion with a knife and fry it in vegetable oil until half cooked. Place cutlets on top of it. Pour in sour cream diluted in water (with salt and pepper). There is no exact dosage of water, since you will have to add more water during the cooking process (it all depends on how much the cutlets absorb). Cover with a lid and simmer for 15 minutes. Then remove from heat and let it brew for another 15-20 minutes.

Beef liver pancakes with semolina

Ingredients:

  • 1 beef liver;
  • 4 chicken eggs;
  • 4 tablespoons flour;
  • 2 tablespoons of semolina;
  • 1 large onion;
  • Salt and black pepper - to taste;
  • Vegetable oil - 2 tablespoons (for frying);
  • A small bunch of any greenery;
  • A head or two of garlic, red pepper if desired.

Cooking method:

We wash the liver well, clear the films and cut it crosswise into small pieces. If veins come across, you also need to get rid of them;

We twist the liver through a meat grinder. Happy owners of a blender with a bowl can use their electrical appliance;

Chop the onion very finely. The cutting method guarantees juiciness to our pancakes, however, if you do not plan to fry them, it is better to grind the onion through a meat grinder, otherwise there is a risk that its pieces will remain damp;

In a bowl, beat the egg with salt and pepper;

Mix all the ingredients: liver, eggs, semolina, onion. Lastly, add flour to control the consistency of the dough - it should be similar to thick sour cream. Add a little more flour if necessary;

Spoon the “dough” into a heated frying pan with oil. Fry the pancakes on each side for about 3 minutes.

Very light frying is also allowed, because, in fact, beef liver can be consumed even raw.

You can serve our delicious liver pancakes with any vegetables - broccoli, zucchini. It is appropriate to use a ready-made Mexican mixture, as well as the usual rice, buckwheat, pasta, and mashed potatoes.

Recipe 1: Traditional liver cutlets

This is the most common recipe. Any liver (chicken, pork, beef) is suitable for preparing this dish. Wheat flour is used as a thickener.

Ingredients • Liver – 0.5 kg; • lard – 100 gr.; • flour – 100 gr.; • one onion; • one egg; • starch – 1 teaspoon. spoon; • salt; • black pepper; • vegetable oil or lard.

Cooking method

Everything is very simple. Grind the onion, lard and liver in a blender or grind through a meat grinder. Add lightly beaten egg, starch and flour to the resulting mixture. Mix everything, salt and pepper to your taste.

Pour a little vegetable oil into a heated frying pan and spread the liver mixture with a tablespoon like pancakes. Fry for a very short time (about 2 minutes on each side) over medium heat. There is no need to overcook them on the fire, because they will lose their tenderness and take on a completely unappetizing appearance. Try to make the cutlets not thick, then they will fry quickly and well.

You can serve it with anything: mashed potatoes, vegetable salad, buckwheat porridge, pasta... It will be delicious with any side dish.

Liver cutlets with carrots

Raw carrots, grated on a fine grater, give the cutlets taste, color and special tenderness. They can be served with a side dish, with a salad or just with greens.

Ingredients:

  • Beef liver - 300 g;
  • Chicken egg - 1 pc.;
  • Carrots - 1 pc. (150 g);
  • Onion - 1 pc. (100 g);
  • Rice - 50 g;
  • Flour - 2 tbsp. l.;
  • Salt, spices - to taste;
  • Vegetable oil - for frying.

Cooking method:

Let the rice cook and add a little salt. In the meantime, let's move on to other products. Peel the carrots and grate them on a fine grater.

Wash the liver, remove the veins and films, cut into pieces convenient for rolling. We'll chop the onion coarsely and twist it too.

Let's pass the liver and onion through a meat grinder. Add grated carrots and mix. Beat in the egg and add boiled rice to the minced meat. Mix well, add a little salt (remember that the rice has already been salted) and add your favorite herbs.

For this amount of minced meat, 2 tbsp will be enough. l. flour. Mix the minced meat for the liver cutlets, let it stand for 5 minutes, and meanwhile heat the frying pan with vegetable oil.

Fry the cutlets on one side (over medium heat), turn them over and fry the other side. Do not make the heat too high, otherwise the cutlets will not have time to fry.

You can serve pickled onions and vegetables with the cutlets.

Thanks to its rich ingredient composition, liver has a beneficial effect on the human body. Considering that the offal is low in calories, it is included in the diet.

  8. Strengthens bone tissue, improves the structure of ligaments and tendons (these mechanisms are controlled by lysine, phosphorus and calcium).
  9. Removes excess fluid from the body, relieves muscle tension and cramps (due to the presence of potassium).
  10. Improves the metabolism of essential fats, accelerates the process of weight loss (B vitamins, fatty acids and proteins stimulate the transformation of lipid reserves into energy).

Who should consume the offal?

Liver dishes are primarily indicated for people suffering from iron deficiency anemia.

In addition, the following have an increased need for proteins:

  • athletes;
  • people engaged in manual labor;
  • pregnant and lactating women;
  • children;
  • patients with burns and open wounds on the body;
  • myopic people.

Liver should be consumed with caution in the following cases:

  • in old age (due to the content of extractive substances);
  • for disorders of lipid metabolism accompanied by hypercholesterolemia;
  • if there are chronic kidney pathologies (pyelonephritis);
  • with exacerbation of a stomach ulcer.

Remember, it is permissible to use only healthy liver for food, not obtained from sick animals.

If antibiotics are added to the complementary food of livestock, its organ is toxic and can undermine human health (cause allergies, intoxication of the body).

How to prepare offal?

Liver is a delicate dietary product that adults and children love to enjoy. However, if processed incorrectly, it loses its taste, becoming dry, bitter and hard.

Let's consider the subtleties of preparing raw materials:

  1. Before treatment, the liver is cleaned of films and bile ducts. In this case, special attention is paid to removing the membrane from the surface of the beef, lamb and pork organ. To facilitate the process, the offal is immersed in warm water for 2 minutes. Then, the film (at the cut) is pryed with a sharp knife and carefully pulled off from one edge.
  2. The prepared raw materials are cut into portions and soaked for 40 - 60 minutes in chilled milk (to remove bitterness and soften the structure).
  3. Before cooking, the liver is dried on a paper towel.
  4. Fry the product for no more than 4 - 6 minutes over medium heat (on each side). The main indicator of the readiness of a dish is the release of clear juice when pierced with a fork. To form an appetizing crust, the raw material is dipped in wheat flour.
  5. Salt the liver at the end of cooking (since the seasoning takes away moisture, drying out the product).

If there is no time to process the raw materials, boil the fresh product in salted water for 2 - 3 minutes and put it in the refrigerator. Subsequently, the “semi-finished product” is subjected to any heat treatment (short-term).

Beef liver cutlets with potatoes and mushrooms

According to this recipe, liver cutlets are more fluffy and plump than regular ones without additives. In addition, boiled potatoes soften the taste of the liver, and onions add a slight spiciness.

Ingredients:

  • Potatoes 250 g;
  • Beef liver 500 g;
  • Onions 60 g;
  • Champignon 150 g;
  • Salt to taste;
  • Ground black pepper to taste;
  • Chicken egg 1 pc.;
  • Sunflower oil 50 ml.

Cooking method:

Boil potatoes in their jackets. Cool and peel.

As a result of this method of heat treatment, there will be much less liquid in the potatoes than if you boil them without peeling. In this case, we don't need extra water.

Grind the boiled potatoes through a meat grinder.

Peel the beef liver from the film and remove the ducts, wash. Grind in a meat grinder or blender. Add to potatoes.

Peel and wash one medium-sized onion and mushrooms. Grind in a blender or pass through a meat grinder. Add chopped potatoes, beef liver, champignons and onions with salt and pepper to taste. Mix the liver, onions, potatoes, mushrooms, salt and ground black pepper thoroughly. Add a raw chicken egg. Mix all minced meat ingredients for cutlets.

Place a tablespoon of minced meat in a hot frying pan with sunflower oil and fry the cutlets on both sides until golden brown.
