Apple season without charlotte is indecent. Therefore, today there are six recipes for this famous pie in the PP version. All recipes are suitable for baking the pie both in the oven and in a slow cooker. But, of course, in my opinion, the tastiest charlotte comes from the oven.

It is best to use apples for charlotte that are dense, sour and thin-skinned. The most suitable varieties are sour “Antonovka” or “Simirenko”. It is better not to peel the fruits, but to use them with the peel, as this provides additional fiber, which means additional benefits. Always check the readiness of the charlotte with a toothpick. Inserted into the middle of the cake, it should come out dry and clean.

Charlotte with apples on thin curd dough in the oven

Beautiful, appetizing charlotte with a lot of apples on a thin curd dough. The dough is soft, tender, with a pronounced cottage cheese taste. The main thing is that the pie is not very high in calories, which is very important for those who are watching their figure. Calorie content of a serving weighing 150 g is 226 kcal.

Ingredients for a 22 cm pan:

  • Apples – 3 pcs.
  • Chicken eggs – 5 pcs.
  • Cottage cheese 5% – 200 g.
  • Corn flour – 1.5 tbsp. l.
  • Rice flour – 1.5 tbsp. l.
  • Sah. deputy (“FitParad”) – 1 tsp.
  • Baking powder – 1 tsp.
  • Vanillin – 2 g.

Preparation:

  1. Grind the crumbly cottage cheese through a sieve. Thanks to this procedure, the dough will be tender and there will be no large grains in it.
  2. Beat eggs into a mixing bowl. Add sugar or a substitute, I use FitParad No. 10. A pinch of salt so that the dough does not turn out bland. Beat everything with a mixer until fluffy foam.
  3. Separately combine the dry ingredients: rice flour, corn flour, baking powder and vanillin. Corn flour gives baked goods a beautiful yellow color, but you can add just rice flour or any other flour of your choice.
  4. Next, add the beaten eggs to the cottage cheese. Stir and add flour in several additions. The finished dough should be quite thick, without lumps.
  5. Place the curd dough in the mold, cover the bottom and sides with parchment paper.
  6. We quickly chop the apples last so that they do not have time to darken. Cut into four parts, remove the middle, cut into thin slices. Next, place the slices beautifully at an angle on the dough, pushing them down a little.
  7. Place the mold in the oven, preheated to 170 degrees, bake for about 40 minutes. Check the readiness of the pie with a toothpick. When the cake has cooled a little, remove from the pan.

Recipe No. 4 Charlotte “No flour!” with apples

Not a very dietary pie, but this one also has the right to end up on our table. Juicy and at the same time tender pie with apples, without flour.

To prepare you will need:

  • 5 pieces. apples;
  • 1/2 cup semolina;
  • 5 eggs;
  • 6 tbsp. spoons of sugar;
  • 1. teaspoon cinnamon;
  • 1 packet of vanillin;
  • 150 g butter;
  • baking powder.
  1. Grind the washed, cored apples (5 pieces) in a blender or meat grinder. Add half a glass of semolina here.
  2. Beat 5 egg whites and 3 tablespoons of granulated sugar separately until a good, stable foam forms.
  3. Beat the yolks with the addition of 3 tablespoons of sugar until well foamed.
  4. Mix applesauce, yolks and whites with gentle movements.
  5. 1 teaspoon of cinnamon, a standard bag of vanillin and 150 grams of softened butter are added to the mixture, and a bag of baking powder is gradually added.
  6. Place baking paper in a heat-resistant form. Pour out the finished dough, bake in the oven at t=190-200oC for about 30-40 minutes.

  5. Place the pan in the oven, preheated to 180 degrees, for 30–35 minutes.

Very tender, airy charlotte with a light aroma of cinnamon. Whole wheat flour adds a special taste and aroma. The recipe is designed for a mold with a diameter of 18 cm; for larger ones, recalculate. If you want to completely replace sugar with sugar. deputy or syrup, it is better to separate the yolks from the whites. Beat the whites with a pinch of salt until stiff, and the yolks with a sweetener. Then carefully combine both masses. Treat your loved ones with a healthy treat.

  3. Peel sweet and sour apples from seeds and cut into thin slices. Next, place the slices on a plate and sprinkle with lemon juice to prevent them from darkening.

  • Rice flour – 100 g.

  • Baking powder – 1 tsp.
  • Honey – 2 tbsp. l.
  • Eggs – 3 pcs.

  • Coconut oil – 60 g.

  • whites of 2 chicken eggs;
  • 1 egg;
  • 1 tbsp. kefir (250 ml);
  • 80 g flour (1/2 tbsp.);

Cottage cheese and apple

Diet apple charlotte with cottage cheese will be even less calorie if you reduce the amount of sugar. You can increase the benefits of a pie with cottage cheese, which retains its beneficial properties after heat treatment, by replacing wheat flour with oatmeal.

For preparation you will need:

  • 250 g cottage cheese;
  • 2 eggs;
  • 50 g of ground rolled oats flakes;
  • 3-4 apples;
  • ½ tsp. soda or 1 tsp. baking powder;
  • 1 tbsp. l. bran (you can use ground flaxseed);
  • 1 tbsp. l. Sahara;
  • cinnamon, vanilla to taste.

Cottage cheese with 0% fat content is suitable for the test. This cottage cheese has a high protein content.

  1. Eggs must be beaten with sugar and vanilla.
  2. Then add ground rolled oats, bran or flaxseed to the contents.
  3. Then cottage cheese with baking powder (soda) is added to the dough, diced apples and cinnamon are mixed in.
  4. The product is baked at 180°C for about 35 minutes. until a golden brown crust forms.

The finished dish contains 103 kcal per 100 g.

With oatmeal

For the oatmeal pie you need to prepare:

  • 4-5 apples;
  • 150 g ground oatmeal;
  • 30 g honey (you can use a sweetener);
  • 4 chicken eggs;
  • 1 tsp. baking powder;
  • cinnamon to taste.

You can buy ready-made oatmeal or grind rolled oatmeal flakes in a coffee grinder or blender.

  • 80 g wheat flour;
  • 4-5 apples;
  • 1 egg;
  • 3 proteins;
  • 3 tbsp. l. honey;
  • cinnamon - to taste.

The pie is prepared as follows:

  1. Beat the yolk and 4 whites separately until foam forms.
  2. Then oat and wheat flour and yolk are added to the protein mass. The components are mixed manually, from bottom to top. This will preserve more air bubbles, which will give the cake a fluffy shape during baking.
  3. Diced apples must be mixed with honey, cinnamon and mixed into the dough.
  4. Charlotte is baked at 180°C for 30 to 40 minutes.

With semolina

  • 1 pinch of salt;
  • 160 g wheat flour;
  • 4-5 apples;
  • 200-250 g pumpkin;

  1. Apples and pumpkin must be cut into thin slices and placed on the surface of a baking dish.

  • 700 g white cabbage;

Ingredients:

  • Wheat bran – 2 tbsp. l.
  • Oat bran – 3 tbsp. l.
  • Fiber – 1 tbsp. l.
  • Corn starch – 2 tbsp. l.
  • Chicken eggs – 2 pcs.
  • Fruit syrup.
  • Water – 180 ml.
  • Apples – 2 pcs.
  • Cinnamon – 1 tsp.

Preparation:

  1. Mix the dry ingredients: bran, starch and fiber, I used flaxseed.
  2. Separate the yolks from the whites. Add the yolks to the dry mixture. Add fruit syrup or any other sweetener. Gradually add water, maybe milk, and stir. The consistency of the mixture should be like thick sour cream.
  3. Add a pinch of salt to the whites and beat with a mixer until stiff peaks form.
  4. Next, add the whipped whites to the mixture with bran. Gently mix with a spatula using bottom-up movements.
  5. Grease the mold with vegetable oil; if you have silicone, you don’t have to grease it. Pour the dough into the mold and smooth it out a little. We lay out the apples, cut into thin slices, in the form of a flower, gradually moving towards the center. Sprinkle ground cinnamon on top if desired.
  6. Preheat the oven. Bake for 30–35 minutes at 170 degrees.
