To prepare a vegetarian cheesecake you will need to perform the following sequence of actions:
- You must first rinse and soak the cashew nuts in warm drinking water for about 1 hour.
- First, you need to mix all the specified components for the cake using a blender or food processor, gradually pouring in refined coconut oil, bringing the mixture to homogeneity at high speed.
- After this, the sticky mass must be placed in a prepared form of suitable diameter with high sides, leveled and put in the refrigerator.
- Now you need to drain the water from the soaked nuts and transfer them to the bowl of a food processor, grinding until smooth.
- Then add vegetable milk with sugar and syrup to the nuts, continue beating at high speed, gradually adding liquid coconut oil with salt, lemon juice, vanilla and zest.

- 250 grams of water and sweetener to your taste.
Just fill your berries with water, add agar-agar and stevia. Bring to a boil, stir for a couple of minutes and then cool.
Pour our berry syrup onto the cooled cheesecake (it should also cool) and put it in the refrigerator for several hours!
Alternative cooking methods
In a slow cooker
Even without an oven, you can make a delicious cheesecake - the dessert can be easily baked in a simple slow cooker. And simple spices in the composition will add piquancy to the dessert. Grocery list:
- Philadelphia cheese – 700 g;
- cream – 100 g;
- sour cream – 3 tsp;
- sugar – 100 g;
- eggs – 3 pcs.;
- shortbread cookies – 100 g;
- butter – 150 g;
- cinnamon (powder) – 1 tsp;
- ground nutmeg – 1 tsp.
The listed products (except eggs) must first be removed from the refrigerator and allowed to lie at room temperature for a couple of hours.
Then turn on the “Baking” program for 3 minutes and heat the oil. Crush the cookies and mix them with liquid oil. Next add cinnamon and nutmeg. Spread a layer of cookies and press them down thoroughly.
Mix cheese, cream, sour cream and sugar using a blender. Beat the cooled eggs separately, and then add them to the cheese mixture. Place the filling on the cookie crust and activate the “Bake” program for 60 minutes.
Note! After finishing cooking, leave the curd cake in the multicooker bowl and then refrigerate it.

Step-by-step recipe for diet cheesecake at home:
- Turn on the oven and preheat it to a temperature of 165–170°C.
- Wrap a springform pan with a diameter of 36 cm on the outside with several layers of foil to make it airtight. Place baking paper on the bottom.
- Grind 500 g of low-fat soft cottage cheese through a sieve or make it into a homogeneous mass using a blender. 3 tbsp. l. Place the butter in a small container and melt in a water bath. Add to cottage cheese and stir. The mass should have a creamy structure. You can do without oil, in which case the cheesecake will rise less and will not be as airy and tender.
- Separate 4 egg yolks and beat them with sweetener, gradually adding 1.5 tbsp. l. corn starch.
- Boil 175 ml of pasteurized milk and carefully add to the beaten yolks. Place the mixture in a water bath and stir continuously until it thickens. It will resemble custard.
- Combine the yolk-milk and curd mass, stirring thoroughly.
- Beat 4 whites (it is better if they are at room temperature) into a strong foam and gradually stir into the curd mixture.
- Place the mixture into the prepared pan. Take a baking sheet, pour boiling water into it (2 cm in height will be enough) and place the mold with the dough. Place this entire structure in the oven for 20 minutes. Then reduce the temperature to 150°C. After 50 minutes, turn off and leave the cheesecake in the oven for another hour.
- Remove the dessert and place it in the refrigerator after cooling completely.
- After 4 hours, serve the dietary Japanese dessert, garnishing it with berries. A snow-white dessert decorated with strawberries or soft pink petals looks impressive.
